As you can see by the photo, not only do we create exceptional products in terms of taste and appearance, we share a lot of fun and laughter. While we take creating our products very seriously, we don't take ourselves seriously and this promotes a very relaxed atmosphere for our couples.

Samples are always available, and we're creating new items all the time. One of our new "winter" truffles is our maple walnut, and it is just heavenly!

We are open 7 days a week and welcome walk-ins, but we encourage our brides to make an appointment so we can give you our undivided attention.

Sunflower Theme Wedding

We had so much fun with Ericka and Jason helping them plan their sunflower-themed wedding. We met with them over the winter after meeting them at a bridal expo. Ericka had e-mailed us prior to our appointment to let us know that she and Jason absolutely loved sunflowers and wanted to incorporate them into their favors. It's great when couples tell us ahead of time so we get a chance to do some research and come up with ideas.

We found a plain, white high-gloss 3x3x2" favor box and then purchased 3-1/2" sunflower appliques. We glued the sunflowers to the top of the box - for 300 favors! After much deliberation (and lots of samples) they picked out 3 truffles: a white chocolate chambord, a milk chocolate coconut rum and a dark chocolate frangelico. We normally fill in the favor box with chocolate hearts, but, in keeping with their theme, we filled the box with chocolate sunflowers also in white, milk and dark chocolate.

When we do wedding favors, we put together a tray of strawberries for the bridal suite as a "thank you" from Morgan's Bay Confections. Their tray had our tuxedo-clad, dipped strawberries and some of our "almost famous" filled strawberries. Our dipped strawberries can be filled with cheesecake, cannoli cream, chocolate mousse or home-made whipped cream. We used more of the sunflower appliques to decorate the tray. The presentation was absolutely beautiful and was a big hit when we delivered it to the catering hall.

We deliver all our wedding favors on the day of the event as close to the time of the start of the reception as possible. For most venues, delivery is included at no additional charge.

Our congratulations to a truly wonderful couple, and we wish Ericka and Jason a lifetime of happiness!

Yummy New Creations

We have been very busy at Morgan's Bay Confections with weddings, bridal showers and birthday parties, but that doesn't mean we stop creating some delicious new additions to our ever-growing product line.

This week we've added two new items. The first is a raspberry flavored caramel. So good. We'll serve this as is and also combine it with our chocolate to make a truffle. Truly enjoyable.

The second new addition is oreo/cream cheese truffles!!!! We're dipping these in our Belgian chocolate in milk and dark and they are beyond belief. What a great addition to our product line. We have well over 20 different truffle flavors and this new one is a "keeper."

Please stop in for a tasting or visit us at liweddings Bridal Expo on September 23rd.

Remember, good chocolate makes EVERYTHING better!

A Very Attractive Favor & Hand-Painted Chocolate

We had so much fun working with the bride that ordered these adorable wedding favors. Aimee is so full of personality and with each visit to our shop, she felt more and more like family.

Aimee always knew she wanted the 2-piece truffle box as her wedding favor - one per person. Where the decision making came in was for the bows and ribbons. She saw a picture in a magazine of a favor box that looked like a gift package so now we had a challenge. The picture she saw was of a much bigger box and tieing ribbons and bows just didn't work on this 2-piece truffle box. So out came the hot glue gun! We glued each ribbon individually after placing the string for the gift tag under the smaller ribbon. Then we glued the bow and attached the gift tag - trimmed the bows and the tags - and we were very pleased with the outcome! Her bridal party was in navy blue so we carried that color theme to the favors.

A week before the wedding, Aimee sent us a message on our facebook page asking if we could paint some chocolate pieces for her cake. She wanted to tie in a L.I. beach theme and asked for shells and other sea items done in white chocolate with a navy blue shimmer. We got right on it, and she was able to get these to her baker to be included on her wedding cake. She promises to send a professional picture of the cake so I'll add this to our blog when it arrives.

We have so much fun working with each couple helping them create something new and unique that shows their personalities. We've got lots of different events in August so please keep checking back for more ideas!

Wine and Truffles - What a Combo!

We've been truly enjoying working with Stacey and Bill who are getting married Fall 2009. We met them at a Bridal Expo in February and clicked immediately. They had some great ideas that we are working to implement.

The first thing they knew they wanted was 8 pounds of truffles to be served during their champagne toast. We thought this was such a great idea and I know their guests are going to be very happy.

Then for a favor they wanted to combine a small bottle of red wine with 2 or 3 dark chocolate truffles in a basket. The basket has proven to be the challenge - finding the right one that shows off the wine and chocolate. They wanted a rustic look, and I believe I have looked at every small basket created! Got a few samples in and think we found the perfect choice. It's a basket that was designed to hold a small plant, but works absolutely perfectly for the wine bottle and truffles. And after the wine has been consumed and the truffles savored, their guests will be able to use this basket for many years to come.

Their only other decision is to go with a third truffle or some other decoration. Stacey thought she might get decorative bunches of grapes, but I suggested we do a grape pattern mold in white chocolate and hand-paint the grapes with edible dust. We'll do the grapes a deep purple and the leaves green. I think these will be amazing and such a nice touch to the basket.

We'll put the basket in a clear cello bag and tie it with a ribbon to match their colors.

We'll be bringing a sample of this basket, as well as many more of our favor creations, to LI Weddings Bridal Show on Sept. 23. Of course, everyone is welcome to visit our shop at any time - we suggest our brides and grooms make appointments so we can give you our undivided attention!

It's All About the Visual

Met with one of our favorite brides again today, Aimee, who is getting married on July 18, 2009.

Aimee chose our two-truffle box and clear bags of goodies for the children attending the reception. She was quite certain of the bow she wanted on her truffle box because she saw a picture in a magazine of a favor box that resembled a gift. The difference between her packaging and her picture was about the size and shape. The box in the picture is quite a bit bigger and square. The two-truffle box is a rectangle.

Meg and I spent Sunday tieing and re-tieing bows and ribbon to try to get Aimee's desired results, but we were not happy how they were turning out. Just too much bows and ribbons for such a small box.

Aimee has come to know and trust us so she was willing to come in today to view other options. We put 4 boxes together with different variations of ribbon, and we found a great solution that will make us all happy. None of the original ribbons are involved, but the old glue gun will be very busy!

We firmly believe in the power of the visual. Describing is not enough for either the bride or for us. It leaves too much room for error. Now Aimee is comfortable with the changes, and we've incorporated her vision into the practical side of the creation.

Of course, with gourmet chocolates, tasting comes first. We're just happy that we can put as much time and attention into our packaging as we do into our mouth-watering truffles.

Favors and Seating Cards - All in One!

Met with Meghan today. She and her FH were in to sample and look at our favor packaging a couple of weeks ago. They are getting married Oct. 9, 2009.

They chose one of my favorite favors. It is a clear 4 oz. apothecary jar that we will fill with 3 truffles and 3 chocolate hearts. Meghan's bridesmaids are wearing navy, so we will tie a navy bow around the neck of the jar.

But this jar has another job to do as well! They will have the seating cards attached to the lid of the jar with a smaller size navy ribbon. We'll set the jars up in alphabetical order so when the wedding guests arrive they can find their table and take their favor with them!

We'll also put a label on the front. Meghan's going to contact the person doing her invitations to see if they can tie in the label to match the invitations. We also do labels in-house, but I recommend outside pros for more elaborate designs. It's best to keep with the people who are the experts - and we're the expert chocolatiers!

Meghan also has some children invited, so we're making up special jars for them filled with milk chocolated covered mini oreos.

Met with Another Great Couple

We had a lot of fun meeting with another great couple, Jessica and Kevin. They're getting married on Sept. 4, 2009 and came to visit us for their favors.

What fun it was introducing them to our truffles and other confections! They picked out a very attractive favor box and now must make the difficult decision of picking out their 3 truffle flavors. We suggested that they take their time reviewing our menu and then come back for a selection to take home.

It's interesting to us that now most couples want to choose their flavors. We have a few that tell us to just mix them up, but most want a particular mix of flavors. We're happy to accomodate everyone as we make everything absolutely fresh for their event.

Jessica and Kevin also decided to mix up their strawberries for their Bridal Suite tray which we provide at no additional cost. They will get some strawberries in tuxedoes as well as some dipped in chocolate and then filled with cannoli.

I don't know how we've gotten so lucky, but we just keep meeting the nicest people.

Incredible Summer Strawberries

In addition to the many favors we create, we've added something that works perfectly for all types of events:

Chocolate-dipped, cream cheese or cannoli filled STRAWBERRIES!!!! We're dipping the bottoms in milk, white and dark but will customize to taste.

We've been getting such an amazing reaction to this creation. So refreshing and so perfect for your Summer event whether it's an Engagement Party, Bridal Shower or Wedding! Of course, these are not limited to the Summer but they work so well for warm-weather festivities (also work great at Bar-B-Ques!)

We so love people's reactions. Their faces tell the whole story. The combination of the 3 tastes is unbeatable.

Oh, as an extra added bonus, our strawberries, like all the rest of our products, are dipped in Belgian Chocolate!

We want to let all LIW couples know that we include a tray of our strawberries with all Wedding orders - whether they are favors, trays or a Viennese Table - for the Bridal Suite at no additional charge! We can do the strawberries wearing tuxedos or filled with cheesecake or cannoli or a combination of all three.

Perfect Favors for a Great Couple

We met with such a really nice couple today - Stephanie & James - who are getting married October 24, 2009. They had never been to our shop or tasted our truffles, but saw us on LIWeddings and decided to give us a try.

They picked out one of my favorite favors - what I call a "Treasure Chest" in a cream colored brocade-type of design with gold lettering for their names and wedding date. We'll add a gold bow to the bottom of the favor, and it will look amazing!

They picked out 3 great truffle flavors - Chambord, Caramel and Grand Marnier in dark, milk and white chocolate.

I told them as they were leaving that they just have one big decision left to make. We include (at no additional charge) a tray of strawberries for the Bridal Suite. We normally do tuxedo-clad strawberries, but we came up with an amazing new offering - chocolate-dipped, NY Style Cheesecake filled strawberries. They've got a few months to decide, and I hope they keep coming back for samples to make their decision!

We've been adding a lot of new items to our menu so I'll keep posting about the best ones.
