There is a really great book out (although kind of outdated and cheesy) called the 'Bride's Thank you Note Handbook' and although I didn't quote anything, it gives you great ideas on how to thank people for specific things like for nonstick pots and pans. But honestly, you can just say, Thank you so much for the _______. It was so nice to see you/meet you at the shower and we can't wait to see you in a couple of weeks/months. Thank you again for your generosity.

Something like that. You don't have to go into a novel (although i tend to be slightly long-winded) because people are so grateful that they get them and then throw them out. It's thoughtful that you are sending them out at all!
