I like #2 but I think it should have the word 'To' instead of 'And'.

thank you, but I copied that part from an etiquette book. I'm just concerned about the names.
example:
uniting apples and oranges - correct
as opposed to
uniting apples to oranges - awkward

Since your FH's parents are mentioned on the invite, there is no need to use his last name.ETA:

I thik #3 is best, I've mostly seen them using the groom's last name.And, on #2, Is he properly Richard Arthur 'Jr' if he doesn't have the last name? Wouldn't he be just Richard Arthur? I'm not sure about the etiquette of 'Jr', but it looks odd to me, so I think you could forestall the oddness by having his last name.
I'm happy we're hosting our own wedding, so we could just put our own full names on the invite!
edited to remove the 'married to' comment, as you're right, I didn't see that it said 'unite,' not 'marry.'

I think option #2 without FH's last name. If you are going to put FH's last name, I think you should also put your last name so it looks more uniform.
