Name one of your favorite dishes to cook

I have the pork in the slow cooker - let's see how that turns out.

But I want to go food shopping tomorrow or Monday and need to plan dinners for the week. I'm looking for some inspiration....whatcha got for me.

For some reason, I really like making this:

Broccoli Casserole

I leave out the ramen flavor pack and add a few more spices to my liking.

It's really yummy! I can easily eat the entire pan in a sitting.

Stuffed Peppers is a hit

Roasted chicken...soo good

Stir fry (beef, shrimp, or chicken)

homemade pizza

CHicken Corden Bleu

Stuffed Chicken..stuffed with either cheese and broccoli or mozz cheese and baby spinach.

Marinate chicken in Italian dressing and cook..love this and quick and easy.

Marinate chicken (or beef or shrimp) in Jack Daniels sauce..again so quick and easy and yummy!

I also love making cut up pieces of chicken, with pasta and veggies in sauce. it's yummy..First, I saute the veggies (string beans, mushrooms, broccoli, carrots, anything you want) added diced tomatoes and a little can of tomato sauce. Then sautee the chicken. Add it together and put over pasta. Very good.

I love making whole roasted chicken too. Well, I suppose I should say I love eating it. I actually don't love handling the raw whole bird...

Re: Name one of your favorite dishes to cook

I love making this recipe for balsamic glazed chicken with rosemary - you can use any part of the chicken you prefer, I find that boneless, skinless thighs and boneless skinless breasts work best - season the raw meat with salt, pepper, and poultry seasoning. Brown them on all sides in a pan with evoo. When you turn the chicken pieces the first time, throw in a tablespoon or so of fresh chopped rosemary. Meanwhile, in a measuring cup or small bowl, combine 1/2 cup of chicken broth, 1/3 cup of EITHER orange marmalade or plum preserves, and 1/4 cup of balsamic vinegar. Stir to combine and pour over the browned chicken. Let cook for about 10 minutes until the sauce reduces and the chicken is cooked through. Serve over a bed of baby spinach or quinoa or couscous!

It's really good! And fast.

I love making soups. My favorite one is curried sweet potato. I make it without the crumbled goat cheese on top. It's delicious!
