Re: Ok anyone have a good spagetti sauce recipe?

Making sauce on a Sunday in the cold weather, is one of my favorite things to do. Here is how I make my sauce:

1 head garlic sliced
1 large onion chopped
1 bay leaf
oregano
basil
parsley
pinch of sugar
salt & pepper
2lbs chuck steak (cut into cubes - try to remove as much fat as possible)
sweet and hot sausage
3 to 4 cans crushed tomatoes (depending on size of pot)
1 can whole peeled tomatoes
Oil Olive

In a large pot heat oil when hot, but not smoking, add garlic and onion until veggies are soft. Add steak and sausage and brown. Then add the crushed tomatoes. I like my sauce thick that is why I add a can of whole tomatoes which I squish in my hands into the pot...if you like your sauce thinner, just use crushed tomatoes. Then add all spices and let it cook all day (5 to 6 hours) on very low heat, stirring occasionally, be careful not to burn the bottom. I use Le Crueset pots which are really tough to burn. Adjust seasonings as necessary. It is important to cook it for a long time to ensure the sausage is cooked through and to allow the chuck steak to become super tender, otherwise it will be chewy. Of course if you don't eat red meat, you could always omit it.

Note: if you do burn the bottom, do not stir it up...just pour the sauce into a new pot and it should be fine. If you stir it, it will get the burn taste throughout the sauce.

Good luck!

Here's mine - we make it in the crock pot on a Sunday afternoon

2 large cans of tomatoe sauce (Hunts)
1 large can of crushed or chopped tomatoes
1 can of tomato paste
2 lbs of hot/sweet sausage browned in fry pan
5-6 cloves garlic crushed and sauted in olive oil
1tsp sugar
couple splashes of red wine
2 bay leaves
1 tsp basil
1 tsp crushed red pepper flakes
salt and pepper

Cook on High for about 5 hours or low for about 8
Also sometimes make meatballs with it.
Delicious and makes a ton of leftovers mmmm

Re: Ok anyone have a good spagetti sauce recipe?

I have an AWESOME sauce recipe for left over tomatoes. My dad and MIL have gardens so I always end up with all these tomatoes and they go to waste...so I came up with this recipe:

Take a baking pan and drizzle olive oil in it. (almost enough to coat the bottom of pan)
then take some fresh garlic, chop it up small and sprinkle it all over the pan.
Then take some fresh basil and chop it up and sprinkle all over pan.

Finally take tomatoes and chop them up in large chuncks...put in pan skin side up if possible and a little salt and pepper for taste.

Place baking dish in oven at 400 degrees and let cook for about 1 1/2 hours (up to you) every 1/2 hour take pan out of the oven and with a fork press tomatoes down. keep on repeating this until you are done cooking the sauce.

The reason I cook skins up is so they burn and turn almost black. This gives the sauce a GREAT taste.

You can also chop some sausage up and put it in the sauce.

*If the sauce gets a little dry...just add a little pasta water to it and mix well.

Let me know what you think!!
