Ate our cake last night.....

Ans it preserved really really well. Almost as good as our wedding day we were shocked!

I wrapped it in like 5 layers of plastic wrap and then another 4 layers of foil the day after the wedding and froze it right away!

The cake was still moist and the filling was great. The only thing a little off was the buttercream icing the sugar was a little grainsy and not as silky smooth as the day of, but totally edible!!!

I think I totally wrapped our cake the wrong way - I don't think I did the plastic layer, just the aluminum foil over and over and over. I hope our cake is edible on our 1 year cuz that thing is taking up CRAZY room in my small freezer!

that is great.. the next question of the day is .. how was it wrapped ? Was it a special type freezer? I had mine in my mothers for the first 3 months but since transferred it and now have it in an professional freezer as we speak.. I am hoping it fairs.

The day after the wedding I wrapped it in 5 layers of plastic wrap and about 4 layers of aluminum foil and it has been in teh back of my regular freezer since.

I took it out yesterdaymorning and put it in the fridge and about an hour before we were giong to eat it I took it out of the fridge, took all the wrappings off, put it on a plate and let it thaw the rest of the way on the counter!
