Baking Question

Baking Question

Okay, So I was 'asked' to make a cake for a baby shower. I want to make a fresh strawberry filling.

Anyone know how to go about doing that? I want to try and make it as healthy as possible because the mom-to-be is a little bit of a health nut. Soooo I am not going to go the 'strawberry filling in a jar route'.. Im thinking fresh strawberries diced and left to sit in some sugar to get a natural syrup?

Help please!

Re: Baking Question

take some fresh strawberry's and put them in a food processor to make a puree add some maple syrup and or brown sugar.

Than heat it just a bit.. let it sit in the Fridge.
Slice fresh strawberry's and add to the mixture.

good luck.

Let me know how it turns out which ever way you do it.

Re: Baking Question

I think there are two ways you can go with this. Either find a recipe you like or do a semi-homemade...

Here's a strawberry cake recipe that I love from the Food Net Barefoot Contessa: Strawberry Country Cake. It's outrageously good.

Second way you could do this is do a box cake with the strawberry filling. I would do a mixture of a homemade strawberry jam and fresh berries. Take a pint or so of strawberries and put them in a sauce pan. Combine a cup of water and a cup of granulated sugar (you could also use the baking splenda mix, though some people KNOW when you use splenda, so you may not want to do that). Cook that down until the berries are very soft and you have a nice strawberry syrup simmering. Don't let it reduce too much meaning don't let too much of the moisture cook off. And if it looks like it won't be enough to mix with another pint of cut fresh berries after its cooled, double this. Take it off the stove and let it cool. After it's cooled but not yet hard mix in an equal amount of fresh cut berries and you should have a nice mixture now that you can use as a filling b/w layers of cake. You could either frost the cake with a whipped cream frosting (so you have almost made a shortcake) or you could do a vanilla meringue icing.

Very doable and if you use organic berries or something like that, you can play that up as part of the healthiness!

HTH!

Re: Baking Question

How about an easy strawberry shortcake?? EASY!!

Things You’ll Need:
A container of fresh strawberries
A small saucepan
About 1/4 cup of apple juice
An electric mixer
Heavy Whipping Cream
One heaping teaspoon of sugar (more or less to taste)
Your warm strawberry filling
Your fresh whipped cream
One or two boxes of Entenmann's Butter Loaf pound cake, cut into 1-1/2 inch slices.
The handful of whole strawberries you set aside before

Making Your Strawberry Filling

Step 1:
Cut your strawberries into halves. For larger strawberries, cut them into quarters. Put a handful of whole strawberries to the side. Drop them into the saucepan.
Step 2:
Pour in your your apple juice, with the saucepan sitting over a medium flame. It's important to stir gently as you slowly pour the juice in. Keep an eye on it as you pour, you might not need all of the liquid.
Step 3:
When the mixture is done, the strawberries will be warm and saucy. Let cool.

Making Your Whipped Cream

Step 1:
Combine sugar and whipping cream.
Step 2:
Using the electric mixer, beat on a high speed until peaks form, keeping an eye out for how thick or fluffy you want your whipped cream. It can range anywhere from Cool Whip texture, to the texture of the canned whipped cream.

Assembling Your Dessert

Step 1:
Create a bed of whipped cream. On a small plate, take a spoonful of whipped cream and spread a layer on the bottom.
Step 2:
Now, layer first with pound cake, strawberry filling, pound cake, and then whipped cream.
Step 3:
Top each tower with a whole strawberry or two, depending on the size.
