DH and I want to make cupcakes using buttercream that isn't frosting or Icing. We want it to be smooth and silky texture like Cakes By jay or the other bakers we have tasted at wedding events. Anyone know what this kind of buttercream is called? Anyone have a recipe for it?

Try boiled icing, it is soooooo smooth and creamy, you'll love it! It is what a lot of decorators use. PITA to make, but so worth it. I have a recipe at home, but here is a similar one:
