Cake

I'm hitting the one year marker next month. My husband and I can't wait to eat the cake. We're bummed we didn't think of cutting it into 12 and eating on on each month anniversary. Anyway, my question is: has anyone eaten their cake? Did it taste ok? We wrapped in in several layers of foil and put it in a giant tupperware container...

Congrats on hitting one year soon! How exciting! We are not even close yet. We just got married this summer, so we have a ways to go. But, we are really looking forward to having our cake on our anniversary...it will be a wonderful memory of our special day. Enjoy reliving the sweet moment! What else are you planning to do to re-live it? Will you watch your video?

Gosh, we haven't even thought of what we're going to do.
I won 2 tickets to 42nd street the friday before, so we'll probably do that and dinner.
We're thinking about going to Italy or Spain but not till November. My husband is training for the NYC marathon (again), so we'll go after the marathon and when prices will be ultra low.

Cake - OK but dry probably...

It should be OK but probably a little dry - not sure what it might do to the icing. The auto-defrost cycle on most home freezers these days tends to be a bit hard on freezing. I work for Pillsbury in the foodservice division and most of what we sell is frozen. I think our maximum recommendation on frozen shelf life for any pre-baked product is about 6 months, some are less - primarily because it tends to dry out after that and that's taking into consideration that commercial freezers don't have the thaw-freeze cycle that auto-defrost freezers have. It's good that you have it well protected from the air. You might want to have it with Ice Cream in case it is dry. Good luck and enjoy! We ate ours right away because we didn't get more than a bite at the reception and we're planning to move - maybe across country - so I couldn't picture trying to move it frozen just for our 1 year anniversary.

mine was GREAT!

What a surprise too! Fox Hollow's staff
wrapped it up in a freezer container and
then I sealed it in Saran Wrap and a
heavy duty freezer bag.
It was delicious and a happy sentimental
note to our 1 yr celebration.

Cake questions for Phyl

What was your cake made of? Was it fondant or buttercream? And, does that determine how well it will stay?
