Chicken Breast recipe?

Chicken Breast recipe?

Does anyone have an idea for what I can do for dinner with some bone-in chicken breasts? I have to use them tonight. We're on the 7th floor and are not allowed to grill anything. Usually, I'd bake them, but it is so darn hot to put the oven on.

Thanks!

Hmm no grilling or baking... what's left. Microwaving would be yucky...

I was wondering if anyone has a way to cook them on top of the stove...

I have a great recipe but it would require your oven for a little bit... do they still have the skin on?

You can do 2 things:

Sear them in a super hot pan with a touch of olive oil &/or butter and fresh rosemary. About 4 -5 minutes on each side until they are getting brown & crusty.
Pop in the oven on 350 to finish for 15-20 minutes or until cooked through. I squirt some fresh lemon on when I serve it. Always comes out great.

OR

Cut a SMALL pocket in them. SMALL opening and then stick your fingers in to make a big opening inside.
Stuff with just about anything. I use spinach & feta. You can use any cheese. You can use seafood & crackers. You can do ham & cheese. Asparagus & swiss. Gorgonzola.
Then pan sear & finish in oven like above. (I say make the pocket small so all the stuff doesn't fall out when you cook them.)

If you REALLY don't want to turn the oven on, I would recommend deboning them, pounding them flat & making some kind of saute. Maybe check francaise or marsala or even chicken cutlets.

Good luck!

All late but 1/2-1 cup of olive oil, 3-5 teaspoons balsamic vinegar. 1/4 teaspoon red pepper flakes. I eyeball oregano as well.

Marinate chicken for 30 minutes or so in the mixture.

Then pan fry till cooked but not overdone.

I like to throw in onions as well and serve it with rice and green beans. Super quick and the balsamic vinegar helps keep it SUPER moist.
