Re: chicken cutlets

I was hoping this was about those chicken cutlet fake boobs.

You could go crabbing that would be fun.

For dinner you could make a garlic, chicken, broccoli and onions stir fry.

Fajitas

Get some of that buffalo wing sauce and make breaded buffalo chicken sandwiches.

Chicken salad and chicken soup.

Cook them on the George Foreman grille and serve it over salad.

I only eat chicken I'll stop by for dinner.

This is one I posted a few weeks ago, it's really good:

This is super easy but it does require planning because he chicken has to marinate over night

Chicken Fajitas

cut 12oz of skinless boneless chicken into strips
marinate in
1/4 cup olive oil
1/4 cup lime juice
1/4 cup tequila
2 tablesspoons fresh cilantro
2 cloves garlic, minced
1 teaspoon cumin
pinch of salt
pepper

let it marinate over night (as little as 4 hours is also OK If you are short on time)

cut 1 red, yellow and green pepper as well as 1 yellow onion into strips (to save on time you can get the frozen pepper and onion veggies from Bird's Eye)

heat some olive oil in a large skillet, saute veggies, until crisp tender, remove from pan.

drain chicken, remove large peice of cilantro and saute in hot pan - it will cook quickly because the lime juice actaully cooked themeat alittle while marinating, when done toss the veggies bcak in the pan and heat together for a mintute or two.

thanks for the suggestions

AND my DH owns a bait and tackle - using chicken to go crabbing would be blasphemy!

Re: chicken cutlets

Sometimes I marinade them in BBQ sauce and bake them.

Also, sometimes when I make breaded chicken I mix a little mustard into the egg or margerine that you use before dipping it into the bread crumbs. Its good if you like mustard. You can also mix a little parmesan cheese into the bread crumbs.

ETA: You can cook them and chop them up, put them in a pasta salad.

You wouldn't want the crabs to catch salmonella.

Re: chicken cutlets

I'm going to try this recipe for a marinade for the first time this week, so I can't really say for sure if it's good or not, but it sounds yummy:

1 lime (juiced)
12 oz. light beer
1 tsp. honey
2 cloves garlic (minced)
salt and pepper

And this recipe I have made and it's pretty good:

Use thin sliced chicken cutlets. Dip one side of each cutlet in melted butter and then breadcrumbs, and then place, breaded side down, on a baking sheet (line with aluminum foil for easier cleanup). Then place a slice of mozzarella and a slice of roasted red pepper (the kind that come pre-marinated in the jar) on each piece of chicken. Fold the chicken over and use a toothpick to keep it closed. Bake at 350 for about 30 or 40 min.

grill it with some cajun spices and chop it up for salad!

Re: chicken cutlets

marinate them in sweet-spicy french dressing, some soy sauce, and some chopped garlic for a few hours. Then throw them on the grill for about 10 minutes.

I make that with some creamy potato wedges and asparagus....YUM.

Chicken Ham and Cheese Roll-ups

1. Bread the chicken cutlets using ranch dressing
2. Place a slice of deli ham and some mozzarella cheese in the center of the cutlet.
3. Roll up cutlet and use a toothpick to hold it together.
4. Bake at 375 for 30 minutes.

They are soooooo YUMMY!!

Re: chicken cutlets

you could make Speidis depending on how thick they are. This is a Binghamton concoction that my DH now has me obsessed with. It's marinated chicken that you cook on skewers and eat on Italian bread. SOOOO good. It's hard to find the mar. sauce but bottled Ital. dressing is pretty close.
