Coming up on 1st Anniversary....and ready to eat cake?

First, I can not believe that it has been [almost] 1 year!!!

We are planning to at least try a piece of our cake in our anniversary celebration. I've had it safely stored in our freezer all year.

Here is my question.....the top of our cake is huge! How far in advance do I need to take it out of the freezer? I want to make sure it is completely defrosted, but I don't want it out too long.

I think I took it out a day or 2 before and it was just as good as it was the day of.

Yep, we had the whole top of the cake, and 1 day before was fine, put it on the counter about an hour before we wanted to eat it---it was SOOO GOOOD!

I'm worse - I threw ours out the last time I cleaned out the fridge/freezer. Neither of us wanted to save it and have to eat it.
