Thanks! DH is Irish and his mom makes it every year for him. He told me last night she won't be making it anymore and I had to. I asked if I could throw it in the crockpot.

I make it for st pattys day every year. Just boil the corned beef for about 3 hours with some pickling spice and about 2 hours and 30 minutes into the cooking time, throw in some carrots, potatoes and cabbage. It's so easy!

My mother takes 2 heads of cabbage cuts them in half and soaks them in water for about 10 minutes.

Then she puts 2 corned beefs in a huge pot, adds the cabbage, water to cover and 2 cans of beer. Then it cooks until it's falling apart.

I made this last year...I added mustard seed in addition to the mustard and also used Splenda Brown Sugar. It was great!

And it does not take 11-12 hours....it was done in 8 hours on low....

Ingredients:

* 6 carrots. cut into chunks
* 2 onions, chopped
* 2-3 lb. corned beef brisket with seasoning packet
* 12 oz. can beer (non alcoholic is fine)
* 2 Tbsp. yellow mustard
* 1/4 cup brown sugar
* 1 cup water
* 8 wedges cabbage

Preparation:
In 4-6 quart crockpot, combine carrots and onions. Rinse corned beef under cold running water and pat dry with paper towels. Place in crockpot and sprinkle with contents of seasoning mix. Pour beer over brisket and spread mustard on brisket. In small bowl mix brown sugar with water and pour over brisket. Cover crockpot and cook on low setting for 11-12 hours.

Remove corned beef from crockpot and cover with foil to keep warm. Add cabbage wedges to vegetables and liquid in crockpot. Cover crockpot and cook on high for additional 30-40 minutes or until cabbage is crisp tender.

To serve, cut beef across grain into thin slices. Remove vegetables from slow cooker with slotted spoon and serve with beef. Serve cooking juices over the food, if desired. Offer additional mustard on the side. 8 servings

That's what I plan to do. You can do it in the slow cooker too but I didn't have time to start it tonight and I'm out of the house too many hours to set it before I go. I am gonna add some beer to the water so it will have a little more flavor.

i throw it in a pot and cover it with water, add the juices/spices from the bag since that seasons it. Add a dash of pepper and garlic unless they had a spice bag (or add pickling spice if you have it just a touch) add carrots, celery, and some potatoes. BOIL for 3 hours then add cabbage the last 15-20 mins. Drain and all done

Slow cooker is a good thing if you can't sit there and watch it just don't put it on high - low otherwise you will have string.

I am going to make a casserole since we did the whole traditional german/irish thing of corned beef, cabbage, veg but noodles no potatoes and swiss and milk baked into a yummie thing. New recipe so can't wait to try it tomorrow.

I usually do shepards pie or bangers and mash today but dh just wants chicken and rice IoI

Re: Corned Beef & Cabbage

we had it for dinner yesterday since i was supposed to celebrate with my parents tonight. i put everything except the cabbage in the crockpot at 7:30 am. Dh took out the corned beef at 6:30 and put in the cabbage on high. By 7:30 it was time to eat and the cabbage didn't really cook.
