The top layer of our wedding cake has been sitting in the freezer for just about a year now. I want to defrost it for our anniversary Sat. Should I put it in the refrigerator or leave it out? Any tips? Thanks ladies

Re: Defrosting the top layer?
I would put it in the fridge first and then take it out that day you are going to eat it. I think that's what I plan to do this weekend as well.
Happy Anniversary. Hard to believe a year is hear already, huh?

Re: Defrosting the top layer?
I would advise against refrigeration. Refrigerators dry out foods. Our company sells frozen bread and we tell our custoemers to NEVER store the product under refrigeration because it will increase the staleing. You should be able to just remove from the freezer a few hours before you plan to eat it, and bring it to room temperature by letting it sit out. Just watch for condesation as it thaws, and remove the wrappings and replace with fresh saran wrap if needed.

Re: Defrosting the top layer?
I agree with Karen H about the condensation. Make sure that if you remove the cake from the freezer, that it is kept covered as it comes back to room temp.
However, putting it in the fridge might not be a problem if your cake is covered in fondant. It protects the cake from becoming dried out. I can tell you that when I was defrosting my top layer, I put it in the fridge overnight the night before my anniversary, and then took it out of the fridge about 3-4 hours before dinner, so that it could come down to room temp. The cake was wonderful - still moist and just as delicious as the day of the wedding!

Re: Defrosting the top layer - TWO years later?
Believe it or not, we never got around to having our wedding cake on our first anniversary - and now, we're approaching our second anniversary!!! Has anyone waited two years to have their cake? Do you think it will be unhealthy to eat it?

I had the same question
We will be away on our anniversay, Sept 23rd, so I was going to take it out this weekend instead. It has been in our big freezer all year so I imagine it will take some time to thaw. I can't wait to eat it! It was awesome the first time around! Happy anniversary to all celebrating this month.
