Dinner Dinner what's for dinner?!

Original post by jtgarsik

So i'm thinking of marinating some boneless chix in some low cal. extra light italian dressing w/some garlic & onion....i have yet to cook chicken w/italian dressing & always hear that i should! lol...anyways, so i'm going to make that, w/some roasted potatos & a big salad... i am trying to cook healthier being that dh has to drop a little weight within the next 2 weeks....i made him eggwhites this morning for breakfast(rather than his usual bagel (sometime TWO!) globbed w/cream cheese ) , a lunch w/no carbs either but some granola to snack on(switching that to yogurt tomorrow ).. He is a carb-o-holic, so i figured if i cut the majority of that out of his diet, plus him running each night & drinking plenty of water,
a small amount of potatos should be okay w/dinner right???

anyways - what is everyone else making???

Question:
what are other good sides besides vegetables, potatoes or rice? I never know what else to make!

one time i chopped up some HUGE vidalia onions, tossed them in some egg & then some flour that i seasoned w/complete season(but use whatever u like)...i fried 'em up & they were like onion rings! DELISH! but SOOOO not healthy good for a change though once in a while! i usually try to stick to veggies but i try to switch up HOW i make them...like i have a really awesome twist on string beans that i got from WW, or make a corn salsa/salad... u just have to try to be creative! Baked potatos are always a yummy/filling side too...

Pls post the WW green bean recipe!!!!! :)

Lately I've been steaming asparagus (I usually put them in the oven and roast with olive oil and garlic and black pepper ) and also cooking veggies like broccoli or brussels sprouts in chicken broth-adds flavor w/o the fat!! Also roasting carrots is so easy and yummy...spray a baking sheet, then put baby carrots and spray them with butter spray or coat very lightly w/olive oil and sprinkle with black pepper....roast at 350 for about 20 minutes or so until tender.

eta: We are going to MIL's house for Passover dinner...I like Easter dinner better lol....not a fan of chopped liver
(no offense to anyone.......!!!!)

YUM...it's so good! an SOO stinkin' EASY! i also do it w/other veggies, sometimes chicken, etc.. but i like it the best w/fresh green beans

-------------------------

WW Oriental Green Beans
makes 6servings; 1pt per serving
(68 calories/2.4grams of fat/4g fiber)

1.5lbs fresh green beans/trimmed
3tablespoons soy sauce
1tablespoon oriental sesame oil
1tsp sugar
6 garlic cloves minced

*In small bowl, combine soy sauce, oil & sugar..set aside.

In a large frypan, fill with water untill greenbeans are just covered(about 1/2 - 1 inch of water)..let boil about 4-5minutes or until gb's are tender. drain & set aside...lower heat to medium, and add garlic, and soy mixture to pan...let garlic sautee a minute or two...then toss in gb's. Toss and coat gbs w/mixture and then cook untill garlic is softened & flavor is sweet..feel free to add sugar or more sauces to ur liking.

enjoy
