This is ALWAYS a hit:

Spinach Artichoke Dip

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
10 oz frozen spinach
6 oz canned artichoke hearts -- without oil
4 ounces romano and/or parmigiano cheese
8 ounces italian shredded 3 Cheese blend or shredded mozzarella
8 ounces philadelphia Chive & Onion Cream Cheese
3 egg whites
1 clove garlic clove

Mix romano and parmesan cheese and garlic in a food processor. Add egg whites,
cream cheese, spinach and artichokes. Mix until well blended. Put in a oven-safe dish. Fold in
mozzarella. Bake at 375 for 20-25 minutes or until cheese starts to brown.. Serve with tortilla chips,
bread, crackers, or fresh veggies.

I think the one I usually use is on foodtv.com and was tyler florence . I know I changed the marinade a little but it's super easy. . and since I'm in an apt I just used the george foreman instead of an outside grill. . I didn't use that peanut sauce though.

I made these a few months ago and they were a hit

Mini Bacon and Cheese Quiches

Ingredients
1 spray(s) cooking spray
36 item(s) wonton wrapper(s), 3 1/2-inches square each
1 small onion(s), finely chopped
1 cup(s) fat-free egg substitute
1 1/2 cup(s) fat-free evaporated milk
1/2 cup(s) low-fat shredded cheddar cheese
4 slice(s) cooked crisp turkey bacon, crumbled

Instructions

* Preheat oven to 350ºF. Coat 36 miniature muffin cups with cooking spray.

* Gently press 1 wonton wrapper into each muffin cup allowing ends to extend above cups. Spray edges of wrappers with cooking spray; set aside.

* Meanwhile, in a small skillet, stir-fry onion over medium-high heat until tender, about 3 minutes. Remove from heat and set aside.

* In a large mixing bowl, whisk together egg substitute, milk and cheese. Stir in bacon and onion until well combined. Fill each wonton wrapper with about 1 tablespoon of filling mixture.

* Bake until quiche mixture is set and edges of wrappers are lightly browned, about 20 minutes. Yields 2 quiches per serving.
