Good low-fat Chicken recipe!
My Dad makes this really good chicken recipe that DH tweaked to make it healthy. You can use either chicken on the bone or boneless chicken. Its so easy and so delicious!
Basically you take a bottle of Italian dressing (we use the fat free one) Marinate your chicken in the dressing. Your really only need to marinate for 1/2 hour, but you can do it the night before if you like.
In a pan mix Italian bread crumbs with a few sprinkles of grated cheese (we use Pecorino Romano b/c its not as subtle as parmesan).
Take your chicken out of the marinade and just dip it into the breadcrumbs on both sides.
Place in a baking pan, use some of the left over marinade to drizzle over the top and just bake!
DH takes the skin off the chicken & uses FF dressing so its healthier....and its soooo good!
