AND WE ATE IT!!! AND IT WAS GOOD!!!! Thanks newlyweds for pushing my little fat butt to the stove! I made eggplant rollatini and we actually enjoyed it! And my DH ate the leftovers! I am SO excited!
I think the trick was watching Lidia's Kitchen - I don't do well from books, but after watching and taking notes, I remembered what it looked like and did it from there!
Thanx guys!

Re: I COOKED SOMETHING!!!
Congrats! Lidia's Italian-American Kitchen cookbook is really good at explaining all the steps if you're looking for a good cook book. I used it to make baked clams for the first time and it even tells in detail how to open the clams.

Re: I COOKED SOMETHING!!!
I have her cookbooks. I just STINK at using cookbooks. I forget to read ahead and I start to panic!

Re: I COOKED SOMETHING!!!
Don't be afraid of cookbooks - using recipes is the only way that you will learn to improvise eventually. You'll start to learn what ingredients are needed to create a certain spicey or savory flavor. Always choose a recipe first, read the entire thing from beginning to end, and then set out your ingredients. If there is anything that can be prepped ahead of time, than do it. It will save you from being too nervous while you cook.
