i was going to suggest ravioli too!
or you can make veggie pizza.... use boboli crust, top with marinara sauce. chop up some onions, mushrooms, peppers, garlic, broccoli... whatever veggies you choose, and have you and DH each 'decorate' half a pizza! we did this on friday and it was delish, and ready in 10 minutes

Re: I need a meatless Recipe
heck ya!
I'll give you my favorite midweek recipe (doesn't take too long to cook, and makes tons of healthy leftovers....)
3 green peppers - diced 1 huge onion - diced 2 packs sliced fresh mushrooms a small can of plain tomato sauce (the 40 cent/6 oz variety) 16-24 oz of drained/ washed canned beans (I love butter beans, but can also be kidney or black beans) a little oil 1 bag shredded low fat cheddar/jack cheese
spices: 1/2T dried oregano 1 t smoked paprika (in bodegas, or better stocked grocery stores) 1T chili powder 1T ground cumin cayenne to taste salt to taste 2 cloves of garlic minced
heat a couple T oil in a skillet. Fry mushrooms until cooked. Transfer to big serving bowl. Fry peppers and a bit of salt, then transfer to bowl. Fry onion with a bit of salt, and transfer to bowl. Add more oil, and fry beans. Add some of the oregano and cumin to beans. Avoid making them mushy. Transfer to bowl. Pour tomato sauce into pan. Add all spices and garlic. Pour over veggies, and add cheese to bowl and stir. Great with guacamole & chips...
