Re: i need some dinner ideas!

do you get the hungry girl emails? here are a few recipes I've saved - they are all adjusted to be healthy and low fat! the chicken cordon bleu one sounds delish and i've been dying to make the eggplant one.

Good Luck Parm
When we brought a beauteous eggplant (purple is pretty!) back to the HG HQ to make a better-for-you version of eggplant parmesan, we weren't the only ones excited -- our Fiber One practically jumped into the blender and blended itself into breadcrumbs (okay, slight exaggeration there). This super-cheesy, sauced-up dish is SO good, we devoured it in seconds. In fact, we're lucky we snapped this pic in time. That yummy portion you see pictured was inhaled seconds later. BTW, this one is so guilt-free and good for you, feel free to indulge a little and eat a couple of servings at a time (that's what we've been doing!).

Ingredients:
1 large eggplant
1/2 cup egg whites (about 4 large egg whites)
1 cup Fiber One bran cereal (original); ground to a breadcrumb-like consistency in the blender
1 cup canned tomato sauce w/ Italian flavoring (such as Hunt's Tomatoes Sauce with Basil, Garlic & Oregano)
1 cup shredded fat-free mozzarella cheese 1/4 cup reduced-fat grated parmesan-style topping
1/2 tsp. garlic powder
1/8 tsp. salt
1/8 tsp. pepper
Optional: dried Italian seasonings (basil, oregano, etc.)
Directions:
Preheat oven to 375 degrees. Slice ends off of eggplant, and cut it lengthwise into 1/2-inch strips. Use a paper towel to blot eggplant slices on both sides (to remove excess moisture). Spray a large baking pan with nonstick spray. Season crumbs with garlic powder, salt, pepper and, if you like, additional seasonings. Coat eggplant slices on both sides -- first with egg whites, and then with Fiber One crumbs. Place slices flat on the baking pan, and cook in the oven for 30 minutes. Then, flip slices over and bake until browned on both sides (about 10 minutes longer). Remove pan from oven, but leave oven on. Spread 1/4 cup of sauce over the bottom of an 8' X 8' baking dish sprayed lightly with nonstick spray. Arrange half of the baked eggplant slices evenly over the sauce. Continue to layer ingredients evenly in this order: sauce (1/4 cup), mozzarella and parm topping (half of each), sauce (1/4 cup), eggplant (remaining slices), sauce (1/4 cup), and cheeses (remaining amounts). Cover dish with foil and return to the oven. Bake for 25 minutes, or until heated throughout. Allow to cool slightly, and then cut into quarters. Enjoy! MAKES 4 SERVINGS

ONION RINGS

HG’s Lord of the Onion Rings

Ring Leader!
These delicious, baked, oniony treats are a dead ringer (c'mon, what did you expect?) for the fast food version. Ok, we lied -- they're much better! Instead of sucking down a greasy, oily, caloriefest of a side dish, chew a few of these crispy & crunchy circles of love (er, onions), courtesy of HG. They couldn't be easier to prepare...or more delicious!

Ingredients:
1 large onion
1/4 cup original Egg Beaters**
1/2 cup crushed Fiber One
Directions:
Preheat oven to 375 degrees. Cut edges off onion, and remove outer layer. Cut onion into 1/2 inch wide slices, and separate into rings. Next, fill a small bowl (just large enough for onion rings to fit in) with Egg Beaters. Using a blender or food processor, grind Fiber One cereal to a breadcrumb-like consistency. Pour crumbs onto a small dish. One by one, coat each ring in egg and then crumbs (give each ring a shake after the egg bath). Place on an oven-safe baking dish sprayed with nonstick spray. Cook for 20-25 minutes, flipping rings over about halfway through. Serves one!

HG's Stuffed Chick Cordon Bleu

Rhapsody in Bleu
Warm chicken wrapped around melted cheese and juicy ham that won't break the calorie bank!? Sign us up...

Ingredients:
One 5-oz. raw boneless skinless lean chicken breast cutlet
1 wedge The Laughing Cow Light Original Swiss cheese, room temperature
1 oz. (about 3 slices) 97 - 98% fat-free ham slices
salt and black pepper, to taste

Directions:
Preheat oven to 350 degrees.

Put chicken in a large sealable plastic bag, squeeze out as much air as you can, and seal. Using a meat tenderizer or a can, carefully pound chicken through the bag until it is about 1/4-inch thick. Remove chicken from the bag, and season to taste with salt and pepper on both sides.

Lay the chicken flat and spread the cheese wedge over it. Evenly layer the ham slices on top of the cheese. Starting with one of the longer sides (or any side, if it's square), tightly roll up the chicken breast cutlet, and secure with toothpicks.

Place chicken roll in a baking dish lined with foil and/or sprayed with nonstick spray, and then cover the baking dish with foil.

Bake in the oven for 20 minutes. Carefully remove the foil covering the dish. Continue to bake (uncovered) for an additional 15 minutes, or until chicken is cooked through. Enjoy!

Re: i need some dinner ideas!

I love making minute rice, and then adding some red kidney beans to it. It's just so yummy, and such a filling side dish. I would then take that and add it to a wrap with some grilled chicken. One of my favorite meals.

What are you in the mood for? Something light? A big meal?

Avocado-Mango Chicken
The flavors of Latin culture and the tastes of a spicy city (Miami!) inspired this dish, which takes boring baked chicken to an entirely different—and definitely delicious—level.

Serves 4
Ingredients

* 1/4 cup Worcestershire sauce
* 1 tablespoon soy sauce
* 2 teaspoons adobo sauce (from canned chipotle chiles)
* 2 limes
* 4 boneless, skinless chicken breasts (4 oz each)
* 1 large mango, coarsely chopped
* 1 tablespoon finely chopped cilantro
* 1 tablespoon finely chopped onion
* 2 tablespoons sea salt
* 4 white-corn tortillas

Preparation

Mix Worcestershire, soy and adobo sauces with juice from 1 of the limes in a bowl. Place chicken in a sealable plastic bag and pour in marinade. Refrigerate 30 minutes. Heat oven to 350 degrees. Combine mango, avocado, cilantro, onion, salt and juice from remaining lime in a bowl, then refrigerate. Transfer chicken and marinade to a baking dish and cook until tender and no longer pink, approximately 20 minutes. Remove chicken from oven, place each breast on a plate and top with 1/4 of salsa. Serve with 1 tortilla each.

Re: i need some dinner ideas!

Tonight is the first night I am cooking for DH. I went to foodnetwork.com and found some amazing ideas on there. On the right hand side you answer the questions by selecting the drop down box. It asks you if you are making dinner or lunch and then the next is you select your meat or fish and then the last asks when you want it ready.

I found an awesome chicken dish that takes no longer than 30 mins. I am excited to see how it pans out tonight.

That sounds so good, and so easy! Let us know how it comes out.

Re: i need some dinner ideas!

I have Goya Yellow Rice at home, and am tossed between making chicken and rice or quick paella with shrimp and chorizo, a fresh string bean and tomato salad on the side.

Unless I feel like turning on the oven for a little while and roasting the chicken thighs instead of cooking them in the rice.

I wish DH would tell me what he would like for dinner - why do I have to be the one to always come up with a menu plan ?

Re: i need some dinner ideas!

We love taco salad.

Ground turkey meat
One of those packets of taco seasoning
Lettuce
Tomatoes
Sour Cream (for DH)
Multigrain tortilla chips all ground up

It's SO easy and it only takes maybe a half hour with the chopping and meat cooking.
