I am having my family over for a pre-holiday dinner this weekend because I am leaving for AZ the following week.
I decided to make Eggplant parm because we all love it and its the only thing I have perfected so far! Its not really a traditional holiday meal...but whatever. But what sides should I do. I was thinking Artichokes but they are so big and that may be too much food.
So I was considering a side of pasta, broccolli rabe and a salad, unless you can think of something better????? Hmmmmmmm

My mom makes either Cauliflower or broccoli (she steams it) and then sautees bread creadcrums in Pam and then sprinkles the bread crumbs over it and bakes it for a few minutes.... it's soo good!

Sauteed broccolini or broccoli rabe goes well. Just saute with garlic and oil and a squirt of lemon juice.

Re: Italian dinner...what sides?
FIL makes eggplant parm all the time, he makes it so delicious. We even had it this past weekend when we had a huge dinner over IL's house. We had pasta on the side, plus there was another plate with meatballs, sausage, veal and pork if anybody else wanted, and salad. Broccoli Rabe is big for alot of Italians.
If you want an appetizer, maybe stuffed mushrooms, fried calamari, bruschetta, or simple would be fresh mozzarella and tomatoes and with a little bit of balsamic vinegar

Pasta and leafy greens - I don't think Italians eat any other sides, haha. Broccoli rabe would be perfect.

Re: Italian dinner...what sides?
whenever we order eggplant parm out we are giving a side of spaghetti. Or what about penne al vodka? not sure if that would be too much.
