Low Carb Breakfast Ideas

Hey ladies... I have been going through a lot of thyroid / weight issues and my endocrinologist wants me to try the Low Carb diet now that my thyroid numbers are getting better. I am ok with this other than being stuck on breakfast ideas. Mornings are pretty hectic between getting my daughter to school and me to work. Does anyone have any ideas on something I could make and re-heat at work? Thanks ladies...

I used to make these:

Vegetable Quiche Cups (Made with egg whites, peppers, onions, spinach, etc. I can get you the recipe) You make them in muffin size cups and I would make 12 at a time and just refrigerate them and eat 2 every day for breakfasy.

Yummmy! I eventually got sick of them after a year so now I do Greak Yogurt or oatmeal (not low carb)

I would definitely love the recipe. I had cheese slices this morning, but it wasn't enough to get me going. The quiche sounds great. Thanks!!

Re: Low Carb Breakfast Ideas

crustless quiche

1 tsp. canola oil
1/4 cup finely chopped onion
1 pkg. (10 oz.) frozen chopped broccoli, thawed, drained
2 cups cholesterol-free egg product
1/2 cup BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
1/2 cup KRAFT 2% Milk Shredded Cheddar Cheese
1/8 tsp. black pepper

DIRECTIONS
Preheat oven to 350°F. Heat oil in small nonstick skillet on medium-high heat. Add onions; cook 5 minutes or until onions are tender, stirring occasionally. Add broccoli; mix well. Spoon into 9-inch pie plate sprayed with cooking spray.

Mix remaining ingredients until well blended; pour over broccoli layer.

Bake 45 to 50 minutes or until center is set and top is golden brown.

Re: Low Carb Breakfast Ideas

3/4 cup liquid egg substitute or 3 large eggs or 3 /4 cup egg whites
1 package frozen chopped spinach (10 oz.)
3/4 cup shredded reduced-fat cheese
1/4 cup diced red or green peppers or mixture of both
1/4 cup diced onions
Salt to taste - I like it salty and used a half teaspoon.
Option: fajita spices
Option: garam masala
Preparation:
Makes 12 mini-quiches
Need: Foil baking cups, muffin tin, cooking spray, oven
1. Heat oven to 350F

2. Line 12 cup muffin pan with foil baking cups, spray the cups with the cooking spray. Be sure not to omit this step, or the quiches will stick badly to the baking cups.

3. Thaw and drain spinach - I wring it out well in my hand, which eliminates a lot of the 'spinachy' taste for those who hate boiled spinach.

4. Mix the spinach, eggs or egg substitute, cheese, peppers, onions, hot pepper sauce, salt in a bowl.

5. Fill the foil cups with the mixture.

6. Bake at 350F or 20 minutes. You will know they are done when a knife inserted in the middle comes out clean.

7. Remove from cups to serve.

Fajita spice variation: Add fajita spice to taste at step 4 (a dash to 1/8 teaspoon). If you like it spicy, you may even want to add a bit of chopped jalapeno

This is it! I usually did about 1-2 cups of egg whites though (real egg whites, yes crack them all and separate...annoying)

I also used hot sauce or red pepper as seasoning. And Salt and Pepper (couple shakes of each...you can always add this later)

Bake for 20 min until top is slightly golden, but not brown or burnt

Re: Low Carb Breakfast Ideas

MIL made this breakfast for us that was amazing. It was 2 scrambled egg whites and on top of that she put some low fat cheese, mashed up some tater tots and cut up some green peppers and put both on top, then she put some salsa over it. It was so yummy.
