Re: MEAT BALLS
Well... if it's not too late, here is hubby's granny's recipe - Italian style meatballs.
1 egg, beaten two generous handfuls of bread crumbs two slightly less generous handfuls of grated parmesan cheese water - add about a cup and mix all ingredients together. You may need to add more water, as the bread crumbs will start absorbing it. You want a loose slurry, not a thick paste. Don't be afraid to add more water - the meatballs need the water to stay tender, too little and they will be dense.
Mix in the hamburger - 1.5 - 2 lbs of hamburger - use your hands to get it well blended, and form into 1.5' balls.
To cook - pour about a half inch of Wesson or Mazola oil into a heavy, deep frying pan (I use a black cast iron pan) non-stick is good if you have it - it's easier to turn the meatballs. Heat on med - med-hi heat. Add meatballs - the temp is right when they bubble and sizzle but don't spit when or cook overly fast. Let them brown on one side, then using a spoon, turn to let them cook on the other side. Remove from oil and drain on paper towel. Add to marinara sauce or serve plain or as desired.
