I would like o cook something fairly easy but that will make them say WOW! Does anyone have any ideas with recipes? We are all chicken lovers and we also like italian food...im not good with steaks at all! Any ideas would be greatly appreciated! Thank you so much in advance ladies!

Also, how is everything with your mom and husband? Dis you guys resolve the issue?

Re: NEED COOKING HELP!
thanks so much ladies! the oven fried chicken sounds real good..if u can fm me the recipe. As for the situation with my mom and dh...it got a little better. I forced dh to get some jobs done and suffice it to say, yes we fought about it a bit but it was completed. As for my mom, i understand her and stuff but sometimes I have to be tough with her or she will treat me like im a baby forever. Thanks for asking but more importantly, remembering! Keep those ideas coming though!

Re: NEED COOKING HELP!
I was going to suggest chicken cutlets also. What about a spiral ham? It comes cooked - you just have to heat it up
I am sure everything will be yummy!! Good luck and have fun!!

How about Chicken Soup to start? It's really easy and great - especially with the weather we've been having.

Re: NEED COOKING HELP!
How about chicken cacciatore (chicken pieces, peppers, mushrooms simmered in tomato sauce)? Very easy and pretty foolproof. I'll be glad to post a recipe if you'd like!

Re: NEED COOKING HELP!
Hi JennRenee,
There are a million ways to make it, but here's how I learned from my mom. Sorry for not having exact measurements-it's a very 'rustic' dish...you can adjust as you see fit.
Start with cut up chicken pieces...wash and dry them, then season with salt and pepper.
In a large skillet, saute a chopped up onion in olive oil until it's translucent. Add a few cloves of minced garlic and saute until garlic is slightly golden (don't burn it!!)
Add the chicken pieces to the pan and brown them on all sides. Add a large can of whole plum tomatoes (and the juice) to the pan. Break up the tomatoes a bit, with a spoon, leaving them a little chunky. Add a bay leaf.
Lower the heat, cover and simmer for a half hour.
Stir in a chopped up green pepper or two, cover and cook until peppers are tender. Chicken should be tender by now.
Stir in some mushrooms, cover and simmer for another five minutes, 'til they are tender.
Serve over pasta, rice or roasted potatoes.
Mangia!!!

Re: NEED COOKING HELP!
Here is the receipe for oven fried chicken I have from an old Disney cookbook! Chicken pieces with bone in washed, (Leave skin on) some flour, paprika, salt, pepper, garlic powder Put dry ingrdeients in a bowl or ziploc bag , and toss to coat, put in baking pan, I spray it lightly, bake at 375 degree oven, DO NOT TURN Pieces! until cooked thru and no longer pink in the middle, about 45 minutes to an hour, the oven does the frying for you. I sometimes add some more of the salt, pepper, paprika and garlic powder on top of the pieces in addition to what it is coated in so all the pieces get all the seasonings. ENJOY!
