Need help with cooking fish

Need help with cooking fish

I usually cook salmon and other fish on the George Foreman grill, and just put lemon juice, olive oil, garlic and S&P on it. I need an easy but tasty marinade or sauce recipe. Any ideas?

I like making a quick salsa to top my salmon. I just kind of wing it but I usually use mango, tomato, cilantro, and a little olive oil. Put it right on top of grilled fish. If I have pineapple I may add that too.

Some simple things I do are:
1 lemon pepper seasoning just spinkled on & grill it
2 marinate in some teriyaki sauce
3 sliced tomato & onion maybe some zucchini & seasoning (this I wrap in foil & put in the toaster oven to bake)
4 cajun seasoning & grill it (my fav.!!)

My mom makes a nice sweet & spicy salmon:

Island spiced Salmon

for a 2 lb. salmon fillet
mix up:
2 tablespoons brown sugar
2 tablesoopns chile powder
2 teaspoons ground cumin
1/2 teaspoon cinnamon

rub onto fillet & let sit in fridge for 30 minutes
Bake 20-25 min. 375 degrees

And as Emeril says 'Kick it up a notch!!' if ya like it spicier!! I do!

This is so great with a sweet potato!

By the way, you can keep these spices mixed in a airtight container & it is great on chicken too!!

Re: Need help with cooking fish

Here's my favorite salmon recipe. We are salmon lovers and eat this once a week.

2 boned and skinned salmon portions
1/2 stick of butter (softened) ( I actually use only about half of that, so 1/4 stick)
juice from 1 lemon
1 tablespoon of fresh basil or 1 teaspoon of dry basil
salt and pepper

Directions
Pre-heat grill. Salt and pepper both sides of salmon and set aside. In small bowl, mix butter, juice from 1/2 of a lemon and basil. Take a piece of foil big enough to cook the fish on, spray it with cooking spray.
Place fish on foil. Squeeze other 1/2 of lemon over fish and close foli to make a 'tent' over the fish, and cook 10 - 12 minutes. The fish will be pink and flaky when done.

Before you serve it, spread a little basil butter over each piece of fish and let melt. Use the rest of the basil butter as a spread for the salmon at dinner. ( I never do it for calorie/fat reasons, but I bet it's delicious!)
