Anyone have any? Poor DH...the meat-eater he is...and I just don't really like it (I'll eat a little)
So often we eat separate meals...any suggestions?

I am all about grilled cheese sandwiches and tomato soup. Simple, but delicious! I also make a lot of Thai Food...pad Thai, etc. Noodle dishes that are really good. You can get the mixes and sauces etc at most supermarkets

its got a lot of carbs but how bout pasta and broccoli salad? you can eat it hot or cold I made it a couple of times and everyone loved it
take: a box of ziti and cook till almost done, that aldante, however you spell it word!!! drain completely then in a big mixing bowl put two-four start w/ two you might have to add more later packages of george washington chicken broth, mix w/ a little onion powder, garlic powder and papirika then add the broccoli in and mix, used chopped broccoli and you can substitute spinach for broccoli it is so good!

I actually like the fake ground meat (soy), I spice it up and put it in pasta sauce. It's healty, low-fat and tasty!

You can use chicken broth in pasta dish with broc. or other types of veggies. That gives a lot of flavor without meat pieces. Also you can add chicken or sausage to pasta dishes for him, then you can just take a few pieces of meat for yourself. The veggie-chopped meat is good, but don't tell him what it is until he eats it.

veggie stir fry - asparagus, mushrooms, roasted peppers, corn - you could through in shrimp, if you want...
any pastas: lasagna, or veggie lasagna, ravioli, stuffed shells, linguini w/clams (easy to make with canned clams, white wine, oil & garlic), etc.
risotto - you can throw anything in there. A favorite: salmon, asparagus and mushroom. You can get the arborio rice from Trader Joes and it takes 20-30 minutes.
grilled eggplant with lime, or eggplant parm.

Re: Non-Meat Meal ideas?
Trader Joe's has TONS of vegetarian meals... frozen and non-frozen. I could spend hours (and a fortune) there!
