So I am hosting a NYE party this yea and wanted some ideas of what to make. Still haven't decided if it is going to be dinner or just appy's, so I would love suggestions on both.
So far my random ideas are squash ravioli, bean chili, and chocolate fondue. Totally random I know, still compiling!

maybe stuffed mushrooms, clams casino, pigs in a blanket (use pillsbury crescent rolls and wrap pieces of hotdog in them.... they're delish!) guacamole (I have a good recipe for this too) maybe a spinach dip, bean dip... chicken wings, sweet & sour meatballs...

Wow, where is my mind?
Ryan, The fondu sounds like a good idea. Are you going to do a dessert fondu like melted chocolate then you can have like strawberres, cut up yellow cake, marshmallows, pretzels, oranges and whatever else for your guests to dip into the fondu.
What about chill cheese dip with tortilla chips. Spinach Dip and you put inside a loaf of like pumpnickel bread and then you can cut the lid of the loaf into small pieces so your guests can dip and eat.
That is all I have for now but when I think of more I will post.

Re: NYE menu
baked brie with raspberry preserves..... it's become tradition at our place.... it is snarfed down in minutes....
samosas is another fav... (basically veggie curries in puff pastry envelopes... just pop in the oven @ 400 until golden... about 15 min)

I have a really good spinach cheese dipr ecipe I can send you and these little phyllo dough sausage and something else filled things my SIL makes...OMG SOOO good and easy. She entertains alot.
Also look into Costco; they have tons of appetizer things in the frozen section and in the pre-prepped foods they also have shrimp cocktail. I always hit upp Costco first when we have to have a party.

Re: NYE menu
Do all hors d'overs. Most everybody likes to pick at something. Might be easier too if you have a lot of people. Cocktail hours at weddings are always the best.
If you want to do a dinner, then you could always do something simple like a spiral ham - just heat and serve, or a roast beef/pork, a nice baked pasta dish like lasagna, ziti.

Re: NYE menu
I think you should do just appetizers. Spinach dip sounds great- the fondue sounds like an excellent idea. Dont kill yourself over dinner everyone loves appetizers and for NYE I think it goes better for the occasion.
