She keeps extending the date she is going to give me my proofs. The contract says 5-8 weeks, and it has been 10 1/2 weeks already. Every week she promises next week and has yet to come through. What do I do?

Wow, that really stinks. I am sorry she keeps doing this to you.
Have you paid her in full? I know I didn't pay the balance until I picked up my proofs. I would tell her the time frame is stated in the contract that you and her signed. See what she does from there.
ETA: My contract said 2 weeks and I didn't get them until 6 weeks later. I have a feeling this is their busy season.

We didn't pay in full - we pay some when we get the proofs, and the balance when we pick up the albums.
This is just so frustrating - I need the pics for thanks yous, and now it is like people will get them and say 'finally' because it has been almost three months! Plus the wedding is like old news already and no one will care about the pics!

We are so sorry to hear about this. You and your husband need to go to her office with the contract and speak to her calmly. Ask her why the proofs are not in yet.
She should not make promises that she can not keep. If the proofs are not in at that point and her when will they be coming in. If she does not know tell her she needs to give you a definite date as to when they will be in her office.

If it makes you feel better, my cousin got married in mid may and I received her thank you in October some time. I got married on Sept. 28th and haven't picked out a thank you myself.
I think they say about 6-12 months for thank you's is the norm.
I would just keep calling. That's what I did until I actually spoke to the photographer and he promised to have them ready by the next day.

Have you been calling her or going there? If you havent gone there~go there and show up and ask what is goin on . ETA: I still havent done my thank yous
