photoshop editing?

I was wondering if anyone knew how to use photoshop to create the b&w and color pictures? I think they look great, but I just cant seem to figure out what to do with the layers?

The way I have done it is to take a color photo and in the pull down menu choose'Image' then 'adjustments' and then 'desaturate' it, which will turn it to a B&W. The use the history brush tool (5th tool down on the righthand side) and paint back the color in the place you want it. Zoom in to make the area you are filling back in larger so you can be more precise, like coloring in a coloring book. You can adjust the brush diameter at the top
