also look into a slow cooker, lots of easy recipes you pretty much put everything in and leave it to cook all on its own!

This is super easy but it does require planning because he chicken has to marinate over night
Chicken Fajitas
cut 12oz of skinless boneless chicken into strips marinate in 1/4 cup olive oil 1/4 cup lime juice 1/4 cup tequila 2 tablesspoons fresh cilantro 2 cloves garlic, minced 1 teaspoon cumin pinch of salt pepper
let it marinate over night (as little as 4 hours is also OK If you are short on time)
cut 1 red, yellow and green pepper as well as 1 yellow onion into strips (to save on time you can get the frozen pepper and onion veggies from Bird's Eye)
heat some olive oil in a large skillet, saute veggies, until crisp tender, remove from pan.
drain chicken, remove large peice of cilantro and saute in hot pan - it will cook quickly because the lime juice actaully cooked themeat alittle while marinating, when done toss the veggies bcak in the pan and heat together for a mintute or two.
Serve in flour tortillas with cheese, guac and sour cream
This is a favorite at our house!

Re: Post your favorite easy recipes
SAME HERE! i have a handful of good ones but need some new additions so post away! here's an AWESOME recipe & it's so effin' easy...
It's a 30minute meal(it actually takes less then that lol) ....and it's soooooo good!!!!!
Asian Plum Glazed Pork Tenderloin
you'll need:
1/2 Cup Plum sauce (i get mine where the asian sauces are in the supermarket it's called Kee-Kum-lee something....can't remember the exact name!)
1) Combine plum sauce, lime juice, scallions, garlic and ginger in bowl and mix well - set aside
2)Cut tenderloin into 1inch thick medallions...smush thinner with hands - Season with salt and pepper, and grill in veg. oil. Grill untill pork is cooked thoroughly(juices should run clear) and sides are just beginning to brown.
3) Pour glaze over meat and cook 1-2 minutes longer(just untill glaze is hot)
4) Transfer to platter, cover with foil & let stand for 5minutes.
I also concocted this meal for dinner and it was so yummy!
Vodka Chicken with creamy stewed tomatoes & penne
you'll need:
about 1/2 stick butter divided in half(or more if needed)
1 small onion chopped
4 boneless skinless chix. breasts(i actually bought a pack of 3 thick ones and cut into them to thin them a little and make more)
1 can of Delmonte original recipe stewed tomatoes - chopped into small chunks
1/4 cup vodka
1/2 pint heavy cream
1/2lb. penne(i used ronzoni healthy harvest whole wheat)
garlic powder, salt & pepper to season chicken
little bit of olive oil --------------------------------------------
1)put water up for pasta
2)season chicken with garlic powder, salt & pepper and grill up in a little olive oil. Set aside
3)in small sauce pan/pot, place 1/2 of butter amount in frying pan with onion. Let cook untill onion becomes tender...once tender add vodka and let simmer for about 10minutes.
4)add stewed tomatoes and let simmer another 5minutes
5)add cream and rest of butter, along with pepper to taste....mix untill well blended.(i also added a little bit of garlic salt - but it's not entirely necessary) - let sauce get hot, but do not let bubble!(cream scalds way to easily!)
6) Add chicken to pot of sauce and let sit with heat on low, add pasta to boiling water.
7) Once pasta is done, cover with sauce & serve chicken on the side :)
SO YUMMY!!!!!!!!

Re: Post your favorite easy recipes
I don't know what i'd call it....
Baked Ziti Surprise ala Jess:
1 package of Perdue Chicken ShortCuts 1 Pound of pasta 1 jar of sauce (preferably larger jar) 1 block of freshly grated mozarella cheese or shredded from the store - but i find freshly grated melts better
Cook pasta Cook sauce Microwave the chicken
1. Drain pasta in sink & grab the largest mixing bowl you have (we just use our largest saucepan as it's obscenely large).
2. Start spooning in some sauce - give yourself a nice layer.
3. Then spoon in some pasta - maybe 1/3 of it.
4. Spoon in some of the chicken & stir it all up.
5. Add in some of the cheese & stir all again.
6. Repeat steps 2-5 again until all pasta, chicken and cheese are mixed in & serve.
It will be VERY hard to stir by the time you put in the final layer of chicken, cheese & pasta...so beware...
Do NOT try to put it all in at once and mix....it'll just be messy & nothing willl be coated properly.
