Wednesday/Thursday: Shrimp Etoufee (YUMMY!)
Friday: Fresh spinach and shrimp salad with turkey bacon bits and balsamic yogurt dressing.
Saturday: Diced chicken in dijon tarragon cream sauce with a wilted greens salad and mashed potatoes.
Sunday: Baked salmon with fresh lemon and dill over oven roased, balsamic vinegar and cheese asparagus.

I wish I was at your place on Wednesday/Thursday!!! I am always so busy with work and DH is always to lazy too cook so we cant even attempt planning out the entire week. We wake up in the morning and say 'what's for dinner tonight?'

Re: Post your weekly menus:
that's a great menu.
We get home very late. I don't cook, but DH is great at cooking and baking, so takes care of the meals (whenever we eat). Usually, we just make a salad. Yesterday, he made filet mignon with cous cous.

Hah come ovr folks. keep me company -snickers- I really need to find a good cookbook or one/two because its so hard to work around the dang recipes for 4-8. Im one 130 pound woman. I dont need to feed the damn troops!
I LOVE veggie lasanga but cant make it because then I eat it for a solid week.
BTW the shrimp etoufee recipe is easy and healthy! I got it from the back of my best body magazine. Love the recipes they post in the back of every issue. One of the few benefits to DH not being home most of the week is that I can mamke the meals I love but he;'s not crazy about.

LOL I hear you. My issue is I need some kind of schedule to maintain my sanity. I may nto follow through with all of it depending on when I get home but I like to HAVE a schedule heh. It also helsp with grocery shopping so we don't overbuy; I buy only what I think I need that week.

I try to stick to easy recipes too; everything I posted takes between 20 min to 45 tops. I get home at 7pm so on the nights Im not doing leftovers I dont want alot of hassle.

I wish that I could stick to a menu. What usually happens is when DH starts to feel hungry, he will come over to me, hug me and ask what's for dinner.

You guys are awesome. I am going to check these out. I didn't know there was a magazine. Thats so cool. I just hate fast food which is what i do if I dont cook-not healthy. if I cook myself I can control portions, fat, sodium etc.
