I am so bored with what I make and I think DH is too. Plus I get home pretty late to make these great concoctions .

Anyone want to share some great quick recipes????

Re: Quick Recipes??????

My quick recipes consist of boiling pasta and then adding one of three or 4 different sauces I keep stocked in my pantry DH loves it though, so that's a good thing!

I love the crockpot for stuff that is easy. All you have to do is dump everything in, turn it on and when you come home you have a complete meal.

You can add a roast with some cut up vegetables (sometimes I buy the frozen ones to save time) and a packet of brown gravy mix and water.

You can throw in a chicken and add vegetables and a little water.

Pepper Steak: throw in stew meat, cut up green peper, onion and a can of diced tomatoes with a little water. Serve over rice.

Beef and Gravy: throw in stew meat, brown gravy and water, mushrooms, onions. Serve with egg noodles. (for this one and the pepper steak, I usually coat the stew meat in flour and brown in a pan on stove before adding to crockpot but you don't have to)

You can throw in chicken breasts and add a can of mushroom soup or cheddar cheese soup or any kind of cream soup you like.

For quick, pasta always seems the easiest/quickest for us. DH and I both love this Giada recipe. It's pasta in a tomato sauce with tuna. It sounded kind of odd to me the first time I saw it, but it came out great and REALLY easy. Here is the link to the recipe (don't pay attention to the cook time on the recipe. I believe that includes the time to make your own sauce, but I just buy a jar ) Recipe

When we're pressed for time, which is most of the time, we cook up some pasta and make one of those Knorr sauces. They're really pretty good.

Re: Quick Recipes??????

I usually do quick cooking, about 30 minutes per meal, 45 if I have to do a lot of prep work.
I try to do variety of stuff, so that we don't seem to eat the same thing every night.
Last night was pasta with red sauce and diced mozz, sausages and sauteed eggplant with garlic.
Tonight will be grilled veal chop (love my stovetop grill) with rice pilaf (Near East mix) and a tomato, mozz and red onion salad with balsamic vinaigrette. Should take me all of 30 minutes to make, only because the rice needs 23 minutes.

You can make easy sauces with broth - Kitchen Basics makes small juice box sized containers of chicken, beef, vegetable broth. I use those to deglaze a pan, and then thicken with my quick roux (1 tbls softened butter mixed with 1 tbsp flour) whisked into the hot liquid. Stir out any lumps.

Brown some boneless pork chops in a fry pan.
Remove to a plate, cover and keep warm.
Add sliced mushrooms and a little fresh thyme if you have. Sautee for a few minutes. Remove to a plate. Deglaze the pan with hot chicken or veggie stock, thicken as above. Return mushrooms to pan, add the pork chops and heat thru.
I'd serve this with boiled yukon potatoes and green beans, salad on the side.

Pasta girl here-I have a really good, reall FAST spicey carbanara recipe. You can also add chicken or shrimp to it easily.

I use wheat pasta so its healthier.

Stiry frys are always good with frozen veggies and chicken or shrimp.

I have a dijjon cjicken tarragon recipe thats pretty fast-only thing thats a pain is the dicing.

A few salmon recipes too. Just FM me if you're interested in any of them. I am a 30-40 min top meal girl.

love, love, love my slow cooker!

you can prep the night before turn it on in the morning and come home to a nice hot meal...

I make stew using a packaged seasoning mix (not the one labeled for the slow cooker) toss in the meat, some potatoes and carrots, any other veg you like and the water. turn it on and it's good to go. About 30 minutes before we eat I add a small can of tomato sauce and some flour/cold water to thicken it a little.

So yummy over rice or egg noddles.

This is a great easy recipe from one of our fave restaurants:

Tagliatelle Nicola (serves two)

Sauce

First, add 1 tab of butter, a splash of extra virgin olive oil, a pinch of salt, and a pinch of garlic to a sauté pan. Heat until butter melts. Second, add a handful of frozen peas and heat shortly. Third, add heavy cream (until peas are submerged), fresh cracked black pepper, a pinch of freshly cut parsley, and a big handful of Regiano cheese. Sauté and reduce to a semi-thick texture. Garnish sauce with Regiano cheese.

Tagliatelle

Cook Tagliatelle pasta till Al dente. Toss with reduced sauce.

The recommended wines for Tagliatelle Nicola are...

Red... Pinot Noir
White... Pinot Grigio

Re: Quick Recipes??????

I almost always do quick-

-Turkey burgers (george foreman grill) with sweet potato fries (just slice sweet potatos into french fry shapes- I'm terrible at this and just make thin fry-like pieces
- toss with a tablespoon of olive oil and a dash of salt and bake in the oven

-Chili- brown ground beef or turkey, add beans if you like them (i use the canned red beans- drain and rinse), a can of diced tomatoes, a small can of tomato sauce, a chili seasoning packet and the really small can of diced green chilis. Serve with rice, shredded cheese and sour cream.

-chicken and yams- peel and slice 2 lg yams to a 1/4' thick, lay them flat at the bottom of a 9x13' pan (there will be a few layers) lay 6-8 raw chicken breasts on top. In a small bowl mix together 2c. chicken stock (i use low sodium fat free), 2 tsp herbs de provence (or a few dashes each of thyme, rosemary and sage), salt and pepper and 1/2c. of olive oil (you could probably use less or leave this out- just add a bit more chicken stock- I'm going to try it this way next time to save calories. Pour liquid mixture over chicken. Bake at 425 for an hour

Last night I made the ultimate quick meal since I wasn't feeling well- a can of tomato soup and some grilled cheese- YUM- my fave!

ETA- I also love this recipe from Giada

Fusilli with spinach, tomatoes and asiago cheese

Re: Quick Recipes??????

For quick and easy chicken, I'll get a bottle of marinade or one of those mix packets, and just marinate some thin sliced chicken cutlets for at least 15 min. (longer if I have time) and then just bake it for about 30-35 min at 350 degrees. It's pretty easy! And besides pasta, that's pretty much all I know how to make!
