Ok, this is my friends recipe that she passed on to me. The come out great. It's a bit of work but so yummy.

1/4 lb. almond paste
1/2 cup butter, softened
1/2 cup sugar (granulated)
2 eggs
1 tbs. almond extract
1 cup flour
red food coloring
green food coloring
raspberry jam
1/2 cup semisweet chocolate chips
1/8 cup heavy cream
Directions:
-Preheat oven to 350 F
- Beat together almond paste, butter, sugar, eggs, almond extract; add flour to create dough
- Split dough into thirds; add red coloring (5-6 drops) to one, green coloring to another.
- Spread each dough mixture into a 9x13' baking pan (lined with parchment paper!)
- Bake for 10-12 minutes (or until dough firms and browns lightly)
- Remove each cake and cool on baking racks
- Place green layer on HUGE piece of plastic wrap (2-3 ft long)
-Spread a layer of jam on
- Top with uncolored dough layer; spread a layer of jam on
- Top with pink dough layer
- Transfer layers (still on plastic wrap) to a baking sheet; enclose with left over plastic wrap
- Compress the wrapped layers (a heavy pan or cutting board placed on top works well)
- Chill in the fridge for at LEAST 8 hours (preferably overnight)
- Remove 3 layers cake from plastic wrap.
- In a pan melt chocolate chips, heavy cream and 2 tsp butter.
- Spread mixture over layers; chill 1 hour
- Remove layers from fridge and slice into squares (You can cut into squares before putting on chocolate and then dip individually.)
ENJOY!
