Red Velvet Cake/Cup cakes

Has anyone used the mix sold at the supermarket to make red-velvet cake or cupcakes? I have a friends b-day on tuesday at work and since I gave up chocolate for lent, I'd like to make something I can eat too...

Or does anyone have any good easy recipies?

did you see it at the supermarket? i've never made it, but i remember someone mentioning on here that they usually only sell the red velvet mix during the holidays, so they stock up on it then. what about a carrot cake, or white or vanilla?

I've made that cake before-it's amazing. I used a regular cream cheese frosting though-not the one that's in her recipe.

Ingredients
Cake:
2 cups sugar
1/2 pound (2 sticks) butter, at room temperature
2 eggs
2 tablespoons cocoa powder
2 ounces red food coloring
2 1/2 cups cake flour
1 teaspoon salt
1 cup buttermilk
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1 tablespoon vinegar
Icing:
1 (8-ounce) package cream cheese
1 stick butter, softened
1 cup melted marshmallows
1 (1-pound) box confectioners' sugar
1 cup shredded coconut
1 cup chopped pecans
Directions
Preheat oven to 350 degrees F.

In a mixing bowl, cream the sugar and butter, beat until light and fluffy. Add the eggs one at a time and mix well after each addition. Mix cocoa and food coloring together and then add to sugar mixture; mix well. Sift together flour and salt. Add flour mixture to the creamed mixture alternately with buttermilk. Blend in vanilla. In a small bowl, combine baking soda and vinegar and add to mixture. Pour batter into 3 (8-inch) round greased and floured pans. Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean. Remove from heat and cool completely before frosting.

Icing:
Blend cream cheese and butter together in a mixing bowl. Add marshmallows and sugar and blend. Fold in coconut and nuts. Spread between layers and on top and sides of cooled cake.

I think you have to be careful with some red velvet recipes because some traditional cakes call for coco

I've made the box mix a few times, it's fine. I've never made it from scratch so i can't compare. Isn't red velvet a type of chocolate cake?

Ooops sorry I totally missed that. You could always do a lemon pound cake or carrot cake.

Here is the ultimate red velvet cupcake recipe:

Have you ever heard of Sprinkles cupcakes? There is one coming to NY soon, but are in LA and Arizona. My friend brought home a red velvet cupcake from the Arizona location and it was HEAVEN! Anyway, they sell the mix at Williams and Sonoma at Roosevelt Field. HTH

Re: Red Velvet Cake/Cup cakes

Red Velvet cake usually calls for cocoa in the mix. As some of the girls have pointed out already, you can just make a vanilla cake and color it with a whole bottle of red food coloring that they sell in the 4 packs. I believe traditional RVC usually calls for one bottle anyway. This way you can get the color w/out the cocoa or the traditional red velvet flavor.

I also had posted a Coconut/carrot cupcake recipe the other day that someone on here made and said they liked it. I love that recipe, if you want that I can give that to you as well.

Also, if you want to do a box mix to save time, I recently made cupcakes for a quick get together for my friends bday at the bar. I made the Funfetti cupcake mix but with egg whites instead of whole eggs, it was light and fluffy and so yummy. If you want to cut out the cholesterol a bit, you can also make those. :)
