Katie Lee Joel's cookbook 'The Comfort Table' has a great red velvet cake recipe. We've made it as cupcakes and they were delish!!

They sell her mix at Crate and Barrel! I made it for DH's bday last year and they were really good.

You can substitute one cup of milk with a tablespoon of white vinegar for butter milk.
