SFAR89 - Cupcake related

I know you're an avid cupcake maker...I want to try to make cupcakes for Easter.

Do you have a nice easy recipe for this novice? Also for the frosting??

TIA!

Re: SFAR89 - Cupcake related

I have an amazing buttercream frosting that I am making for a wedding, as well as I have made it in the past. I have the recipe at home bookmarked on my laptop and I can't remember where it was from at the moment. It's just a basic vanilla buttercream recipe though.

I don't know if I ever have made a simple cupcake recipe. The best one I have right now is a chocolate cupcake recipe, and it's dense and yummy and I don't think it will be that much to get together.

You could also always try my carrot cake recipe as cupcakes, that one is yummyyyy.

I actually just came across a yummy recipe from one of my favorite blogs. Dulce De Leche frosted Carrot Cake Cupcakes That frosting looks so delicious.

also these (I haven't made these, but I have been wanting to, and they look sooo good and I can tell you right now, they look easy, and the addition of Coffee in the cake mix is going to be so yummy'

Sorry I can't be of more help...I usually stick with what I know and have't had time to experiment lol I love to decorate more than create or try new recipes :( Sorry I couldn't be of more help.

I have a question! Can I take a pound cake recipe and make cupcakes instead??

I don't see why not. If you can take regular cake and make cupcakes out of it I think it would be fine, you just have to watch the baking time.

I have never done this, but I am sure it'll be fine.

Thank you!!! I just wasn't sure b/c pound Cake is a little more dense than regular cake. I want to make Chocolate Ganache icing, and the last time I used regular cake mix, the icing tore the tops off! So I figured I needed something a little more dense to hold the icing!

Did you cool the cupcakes all the way???? Maybe you can pop them in the refrigerator before you frost them, b/c that is the only reason why that has ever happened to me. Or if you have used a really, really light cupcake recipe. Then the frosting will tear anyway, you can also do what they do on cakes and do a 'crumb coat' and then put them in the fridge and then frost them regularly and that wont happen. :)

Yep! I let them cool overnight - and then the ganache icing was a liquid consistency so I dipped the tops very gently into the bowl, tops came right off. Thanks for all your suggestions!

You're like the resident cupcake goddess!

I just realized I have a few here in my favorites at work :) I will post them:

classic vanilla

coconut raspberry cupcakes

cappuccino cupcakes

rich chocolate cupcakes with chocolate frosting

this site has TONS of recipes

basic yellow cake with variations

coconut macaroon cupcakes

last but not least, how to dense up a cake mix

I completely forgot that I have a whole 'Food' favorites section of bookmarks lol Hope something here helps :)

I think if you have a plain vanilla or chocolate cake, and you use a cherry filling, or pie filling it will make it taste so much better too!
