I just made this last night and Oh My God it was SO good! It's my new favorite thing! ANd it was so easy too, so I figured I'd share the recipe
10oz package of frozen chopped spinach, cooked and well drained 8oz chunk of Swiss cheese, cut into THIN slices (so they can melt) 2Tbsp Flour 3 eggs, beaten 1/3 cup milk 1/2 tspn salt 9' pie crust (the frozen ones)
In a large bowl, combine the eggs, milk and salt and set aside.
In another bowl, combine the pieces of cheese and the flour. I used a tupperware and covered it and shook it up to coat the cheese w/ the flour.
Put the cheese mixture into the egg mixture. Add the spinach. Mix well. Pour into frozen pie crust.
Back at 350* for 1 hour. Serve warm. YUM!!!

MMMM Whenever I work corporate events I always steal the mini quiche with spinach and swiss and stuff my face. I have to try this! (Although I will be the only one eating it since DH is too picky)

Yeah DH told me while it was in the oven that he doesn't like Swiss cheese When it came out tho, he said it smelled good so maybe he'll have some today.

Hm, I am not sure. Spinach is good for you, and I suppose if you use low-fat Swiss and skim milk, that would help, too!

I just cut & pasted this recipe to try! I don't normally like swiss cheese either, but when it's cooked in things it tastes different than if you just ate a slice, IMO. Can't wait to try it! Thanks for posting.
