Stainless Steel pots and pans?

Stainless Steel pots and pans?

I always thought that the SS was better than the non-stick coating.

When DH made me breakfast our first morning in our new apartment, the pan turned browna nd didn't quite do the job it was supposed to. I had to put alot of butter into the pan to stop the eggs from burning lol I tried to scrub as hard as I could, but the pan is still burnt/stained.
I know you should spray SS pots and pans before use, but I used butter b/c I didn't have any spray yet in the house.

Anyone care to explain?

The only thing good for eggs is non-stick.
I use stainless for everything else.

Only thing I can think of is that the pan was too hot. Never use brillo pads on stainless - it will scratch it and food will stick.

Try baking soda and warm water to clean it, you can soak it for a while. Then take some white vinegar, pour it in the pan and heat it gently for about 10 minutes. Let cool, then rinse the pan.
This makes the pan shiny and removes any residue that might have stuck to the pan.

I didn't have any brillo, so I didn't use that, thank goodness lol I only tried to scrub it as well as I could with the scrubby side of the sponge.

I will try this. Thank you very much!

yea - i have the same problem when i make eggs...don't know what it is. even when i cook on low they tend to stick on the bottom..so i have my one non-stick pan that i use for them...other than that, EVERYTHING else i use the stainless steel & they are great..SO glad i went with them!

as for the burning...do u have a dishwasher??? usually no matter how brown they've gotten they always come clean in the dishwasher.. if u don't i would definetly let it soak with the baking soda/vinegar...sometimes i'll even just do REALLY hot water with liquid dish soap.

..BUT..dishwasher always works

Actually, you are not supposed to put them in the dishwasher. It ruins the finish.

Nope, my dishwasher is my hubby, or my hands haha

I will try to baking soda/vinegar thing. :) Thanks Taryn.

I also did buy a non-stick pan just b/c of the egg incident lol I am prepared now!

Re: Stainless Steel pots and pans?

My parents never had SS, so I always cooked on non-stick. My in-laws bought us the HUGE Cuisinart SS set as a part of our housewarming and I never expected so much to stick and make them brown! I have learned to adjust the flame and make sure that the oil on the bottom or whatever liquid is in the pan/pot is enough to surround the food or it will get too hot and turn brown. Eggs are definitely a no-go in SS. The first time making sausage and peppers in the SS frying pan was a disaster!!!! I used every tip and trick online and from my mom and MIL andnothing worked. I had not choice but to try Brillo and am so glad I did! I rubbed VERY lightly and got rid of all the brown adn did NOT ruin the finish. Personally, I love non-stick so much better than SS but really do love the way SS looks. I bought a non-stick wok and one big non-stick frying pan that I do some cooking in when there is a chance of the liquid in it getting too hot.

With SS, heat the pan until hot, then add the oil - the oil should sort of shimmy across the pan, lower the heat a bit, then add the food. This should help with sticking.
Like grilling, the food will tell you when it is ready to turn. If it sticks, give it a bit longer to see if it will release and let itself be turned.

But don't ever use brillo to clean the pan. It creates minute scratches that will cause food to stick. Also use non-stick utensils to prevent scraches.
Try the baking soda/warm water routine for cleaning. I do the vinegar thing about every two weeks. The vinegar removes any film or residue that might cause burning.
I have a frying pan that I use almost daily, and it looks brand new because this is how I treat it.

maybe that's the norm because i feel like i've heard that before... but I just went and looked and it says dishwasher safe right on the bottom of mine??? hmm... well.. i normally wash my pots by hand anyway..unless there is something i really can't get off (ie: the burn spots we're talking about) but who knows!

Re: Stainless Steel pots and pans?

i have an All Clad stainless steel set

The frying pans it comes with are only good for sauteing
You can not cook eggs pancakes or french toast on those pans

You need to get some non stick pans as well

All Clad makes both

I got this All Clad Griddle which is perfect for making breakfast

The stainless steel fry pans are great for making really crispy bacon too!!!

Yes, they are okay if you put them in, but they are like you're good knives, you don't put them in the dishwasher. I yelled at DH for trying to put them in the dishwasher and his excuse were they are SS! We have a Martha Stewart set along with some Cuisinart pieces and they all say NOT to put in the dishwasher so I don't.

I use my nonstick pots for scrambled eggs and my nonstick griddle for pancakes, fried eggs and omelets. Those are the best.

Re: Stainless Steel pots and pans?

Eggs are best cooked in nonstick pans-even if you spray the crap out of the SS.

A few things you can try to clean the SS pan:
1. You can rinse the pan and then add a little water to cover the bottom. Put that pan back on the stove and crank the heat to high. Let it boil and use a spoon to scrape up the bits. It will make it easier to clean. One of the best tricks I ever learned at culinary school.

2. Get Barkeeper's friend. They make a liquid and a powder version-I prefer the powder. After you wash the pan with soap and rinse, sprinkle a little in the pan and scrub with a sponge. It's kinda like ajax but for cookware. It's the best stuff ever-just make sure you rinse really well with hot water so there's no film.

Re: Stainless Steel pots and pans?

TA, SS + eggs = stuck on mess....but I don't like NS because it's supposed to be unhealthy. One of my friends got a bird and the pet store told her that she had to get rid of all NS pots and pans because the bird would die from the fumes that are emiited from them...if it's bad for the bird then it can't be good for us So what I do is put water in the pan as soon as I put the eggs on the plates. After breakfast the gunk comes off really easily.

Re: Stainless Steel pots and pans?

barkeepers secret it is a product for stainless steel. I would keep trying it and soaking it but you might of burned it due to high heat. If it is all-clad you can get a new pan just contact them if not then i am kinda unsure after you try the barkeepers secret.

SS are great pans but I usually fry my egg in a coated pan only because I ALWAYS burn the damn things. You would think I wouldn't see i cook so much but I always am trying to multitask breakfast and always burn something in the end.

Thanks girls :)

I will try the other tricks first, and if that doesn't work I will deff pick up that Barkeepers secret.

As much as I know about cooking, I never had SS pots and pans before lol :( It's so embarassing to have someone who cooks have a burned pan hanging from her pot rack in her kitchen. hahaha

Thanks again!

Re: Stainless Steel pots and pans?

non stick is REALLY bad for you. it starts to peel after a while and if you burn it the fumes are awful (if you have a pet bird, you can kill it with non-stick fumes).

ss really is best but is a PITA at first until you get used to it. you have to put the oil/spray/butter in it BEFORE it gets hot so it doesn't turn brown. i didn't believe it, but it's true! also, clean it as soon as it's done.

as for the brown already on there, try a brillo and elbow grease. if that doesn't work i've heard using tide detergent will take away the stains. i haven't tried it, but i'm sure if you google it you can find the recipe for the mix.
