We had the top layer of our wedding cake yesterday (since we were in NY where the cake was, and its only two weeks till our anniversary).
It was surprisingly good. I think the fondant helped to protect the cake. It was also wrapped in two layers of heavy foil, then two plastic bags and the box.
The fondant had a bit of freezer taste (I don't usually eat the fondant even when fresh), but the inside was great. Tasted fresh! It was a napolean cake so it had layers of sponge cake, flaky pastry and french custard. Delicious! Finally I got to eat it (since I didn't at the wedding other than the bite Al fed me).
To defrost, we put it in the fridge the day before and then took it out a couple hours before serving.

Ours was very good too. We also took ours out a few days and left it in the fridge to defrost. It is NOT bad at all.

Glad your cake was still good. Our is in the freezer and I could see the freezer burn on it already with about 7 more months to go before we can eat it.

Re: we ate our cake
I'm glad yours was good! Even after wrapping mine fifty thousand times, it was gross!! The outside was kind of gross, but the inside was kind of ok. We just took a bite each, toasted each other and threw it out!!!
good to hear that lisa...I hope all of audrey's cakes are like that
we actually took ours out at christmas to eat...but there was too much food and we put it back in the freezer...i hope that doesn't hurt it...
not sure when we will get to eat it together...either I take it to CA with me...or we wait until october...
I wish we ate it right away!!!

Re: we ate our cake
What do you do with your cake after the one year anniversary mark?

Re: we ate our cake
It is an old wives tale (i.e., something old, something blue). You eat a piece of your wedding cake on the 1st anniversary for good luck.
LisaT - you are brave. I'm not really looking forward to eating my cake a year later. Although I feel a little bit better since you said fondant freezes better. Mine is still in the fridge with 8 mos to go!

Re: we ate our cake
Scoop, do you mean whats leftover after you eat it?
We ate half the cake (my mom invited my aunts over and Al's parents were there as well). We sent the leftover cake home with Al's mom (I don't really know why she wanted it. It was good, but its still a year old cake!)
There were some jokes about freezing what was left for our 25th or 50th etc, but I had my fill of old cake (and it wouldn't stay as well anymore now that the fondant was cut into).

Lisa - I'm so glad your cake was still good!
Yes, the fondant definitely makes a *huge* difference in sealing in moisture and helping to protect against freezer burn. Our cake was delicious even one year later.

Re: we ate our cake
I'm glad you enjoyed it. We forgot to defrost ours, and each ate a frozen bite. It was awful!!
So Erica, Audrey's cakes don't taste good after being frozen for a year, UNLESS you defrost it first!!

Hi Lisa--
Yes...I meant after you eat a piece on your anniversary. Do you throw it out after or save it for the next year?
