What are some easy meals you've been making these days?

I know with my new 'schedule' and DH's new job things are getting crazy...

but the one thing that I make and would love topass to you girls is a chicken wreath:

Chicken Wreath

1/2 C. red bell pepper, chopped
1/2 C. broccoli, chopped
1/4 C. water chestnuts, drained and chopped
2 T. onion, chopped
6 oz. cooked chicken breast, chopped
2/3 C. cream of chicken soup
1 C. (4 oz) shredded Cheddar cheese
2 (8 oz.) pkg. refrigerated crescent rolls

Preheat oven to 350ºF.

Chop pepper, broccoli, water chestnuts, onion and chicken. Combine all ingredients except crescent rolls in medium bowl.

Unroll crescent rolls and arrange triangles in a circle on a 15' baking stone with the bases overlapping in center and points toward the outside. Scoop filling mixture onto widest portion of each triangle. Fold points of triangle over filling and tuck under base at center. (Filling will not be completely covered.) Bake 25-30 minutes or until golden brown. Cut into wedges and serve warm.

Sloppy Joes

1 tablespoon extra-virgin olive oil
1 1/4 pounds ground beef sirloin
1/4 cup brown sugar
1 tablespoon steak seasoning blend, such as McCormick brand Montreal Seasoning
1 medium onion, chopped
1 small red bell pepper, chopped
1 tablespoon red wine vinegar
1 tablespoon Worcestershire sauce
2 cups tomato sauce
2 tablespoons tomato paste
4 rolls, split, toasted, and lightly buttered

Directions:

Heat a large skillet over medium high heat. Add oil and meat to the pan. Spread the meat around the pan and begin to break it up. Combine brown sugar and steak seasoning. Add sugar and spice mixture to the skillet and combine. When the meat has browned, add onion and red peppers to the skillet. Reduce heat to medium and cook onions, peppers, red wine vinegar and Worcestershire sauce with meat for 5 minutes. Add tomato sauce and paste to pan. Stir to combine. Reduce heat to simmer and cook Sloppy Joe mixture 5 minutes longer. Using a large spoon or ice cream scoop, pile sloppy meat onto toasted, buttered bun bottoms and cover with bun tops. Serve with your favorite sides or dill pickles!

Its Awesome! and DH loved it! kept going back for more!

Chicken Bruschetta

My mom buys the big bins of mozzarella balls and containers of bruschetta at Costco and gives me half. I take the chicken breasts and bread crumb them. Then I broil them a few minutes on each side.

Then I put the bruschetta mix on top, making sure to put a lot of the juice on. Then I cut up the mozzarella balls, place them on top and pour some of the oil they come in over the whole thing. I bake it at 350 for about 20 minutes. It comes out so yummy.

Stuffed chicken breasts....it sounds difficult but you basically filet the chicken breast, and stuff it with ANYTHING you want. If its a weeknight, i put chedder cheese, mushrooms and onions. It is delish.

Also, one of my favs is mac and cheese mixed in with chicken and broccoli. Takes like a half hour. Im all about convenient meals.

this is such an awesome idea - I was actually thinking of contacting LIW to make a favorite food/recipe board so whether you're engaged & living together or now married & living together that people can look to the board for ideas, recipes, etc.

can we also post a favorite holiday recipe too?

I love this board!

Re: What are some easy meals you've been making these days?

I love cooking in the slowcooker on weekends and then freezing meals for busy weeknights. Here's something a little different than the typical pot roast or chile. It's from allrecipes.com like everything I make!

Slow Cooker Latin Chicken

1 tablespoon olive oil
3 pounds skinless chicken thighs
salt and ground black pepper to taste
1/4 cup loosely packed cilantro leaves
2 large sweet potatoes, cut into chunks
1 red bell pepper, cut into strips
2 (15.5 ounce) cans black beans, rinsed and drained
1/2 cup chicken broth
1/4 cup loosely packed cilantro leaves
1 cup hot salsa
2 teaspoons ground cumin
1/2 teaspoon ground allspice
3 large cloves garlic, chopped
lime wedges, for garnish

DIRECTIONS
Heat the olive oil in a large skillet; season the chicken thighs with salt and pepper. Sprinkle 1/4 cup cilantro over the chicken thighs; brown the chicken in the frying pan, 3 to 5 minutes each side.
Arrange the chicken in the bottom of a slow cooker. Place the sweet potatoes, red bell pepper, and black beans on top of the chicken. Mix together the chicken broth, 1/4 cup cilantro leaves, salsa, cumin, allspice, and garlic together in a bowl; pour into the slow cooker. Set slow cooker to LOW and cook for 4 hours. Garnish with lime wedges to serve.

In a large resealable plastic bag, combine the first 4 ingredients. Place milk in a shallow bowl. Dip chicken in milk and then place in bag. Shake. Place in a greased 9x13 baking dish.

Combine the butter, garlic and lemon juice. Drizzle over the chicken.

Bake uncovered at 350 degrees for 25-30 minutes.

Mini Turkey Meat Loaves

1 small onion- Chopped
2 tablespoons dried parsley flakes
1 Teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon pepper
2 pounds ground turkey breast
1/2 cup low carb ketchup (or we use crushed tomatos sometimes)

In a large bowl combine the first 10 ingredients. Crumble turkey over mixture and mix well. ( We use the kitchen aid!) Shape into 8 loaves. Place on rack coated with nonstick cooking spray in a shallow baking pan.

I wanted to do an 09er recipe book a while back but didn't get much response. Maybe someone could put one together for the newlywed brunch.

Re: What are some easy meals you've been making these days?

For my bridal shower my mom had bought a recipe box for me & everyone from the shower wrote their own recipe on a card & put it in the box. I can add some of these recipes to the cookbook - they are delicious!

Re: What are some easy meals you've been making these days?

There is now an official newlywed cookbook thread. Make sure to post your first names on the thread with your recipe, I want everyone to get credit for their ideas.

Please don't post recipes unless you have tried making them yourself. Don't copy one out of Julia Childs or Martha Stewarts that is to difficult for us newlyweds to make.

Do you girls want to include these recipes in the book? If you didn't already paste it into the new cookbook thread, just let me know that I can include it. I don't want to include anything without your permission.

Super easy and healthy pasta with chicken (this will give you enough leftovers for close to a week):

1 box of Barilla pasta plus (prepped like normal), any kind is fine but we like penne or rotini the best

Then in a large frying pan (this is the order you should put them in there for cooking):
-three table spoons of EVOO
-1 chopped red pepper
-1 fork-full of minced garlic (I think it's two or two cloves, you've have to check it out on the bottle)
-2 cut up lean chicken breasts
-1 medium sized zucchini cut up
-3/4-1 package of mushrooms

Add more EVOO as needed, but zucchinis are very watery and will add a lot of moisture to the pot so you might not need to add that much more. A note- this is a lot of food, so make sure it is in a large frying pan. If you fill the pan up to the brim, don't worry, it will go down a bit. Just make sure it can all get in there for starters!

Once the veggies are done saute-ing, mix the two together in a big bowl and top with any kind of cheese you want. We've had it with bleu, goat, parmesean, smoked gouda-- it's all good!

ETA: You can add mine in if you want, although it's not much of a recipe as much as it is something I just threw together.
