Easy Corn Casserole

Recipe By : WW 'Simple Goodness' Magazine
Serving Size : 8 Preparation Time :0:00
Categories : Sides & Salads

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/4 cup egg substitute
1/4 cup reduced-calorie margarine -- stick, melted
8 3/4 ounces no-salt-added whole-kernel corn -- can, drained
8 3/4 ounces no-salt-added cream-style corn -- can, drained
8 ounces corn muffin mix -- package
8 ounces plain nonfat yogurt
Cooking spray

1. Preheat oven to 350 degrees.

2. Combine first 6 ingredients in a medium bowl; stir well. Pour into an 8-inch square baking dish coated with cooking spray. Bake at 350 degrees for 45 minutes or until set.

REALLY GOOD AND REALLY EASY

FIL asked me if I can make him some fish curry for the tomorrow night since we're headed there.. and just finished that.. MIL is gonnna loveeee me..

i had pork chops and rice but with beans too hahaha. I finally convinced dh to do something other than steak, chicken or shrimp.

I grilled up some mango chicken and mixed brown rice with pineapples. Some asparagus on the side yummm

First time I did brown rice with pineapples it was pretty good - got rid of that grainy taste.
