Cancel the big catered party. Have it smaller somewhere else or in the house and explain to her that you can't afford it with all the other expenses, ie: Italy..etc. Either she will come up with the cash or she won't. Either way your DH gets a party and you don't kill yourself. When people are not on the same page with you, it's best to leave them out of the planning. Handle it yourself with what you can afford. After all, it sounds like you have so much tension between you guys that I'm sure she has pulled this numerous times. You are obviously angry and need to cut her out of it so you can concentrate on your life. Don't expect anything and you won't be disappointed.

If you can't cancel the party can you change it around so the price goes lower?
Like buffet instead of sit-down dinner?
less people invited?
open bar to cash bar?
just have a free signature drink?

Yes, definitely tell her that you will have to cancel the party and that you are going to do it later this week- of course, you can't, like you said but I bet she will come around!

i agree definately telling her about cutting the guest list/canceling party... the money might appear quickly

Definitely cut the guestlist and let her know you are cutting it because you can't afford it. When she says 'oh just invited them, I'll give you the money later' tell her you can't, you need the money NOW because you simply don't have it.
