Yummy Mexican Dinner

I don't know why, but since we got married I started this Mexican Monday thing where we always have Mexican on Monday.

Last night I made my all time favorite...taco pie. I realized I didn't add it to the cookbook. Does anyone want this recipe? Or are we not really into Mexican?

I LOVE mexican! i would love the recipe!

Ok great! Here it is! Really easy!

Taco Pie

1 c. Bisquick (I use reduced fat bisquick)
1/4 c. water
1 (16 oz.) can refried beans ( I use fat free beans)
1 lb. ground beef, cooked and drained (I use turkey meat)
1 c. thick taco sauce
1 1/2 c. shredded cheese


Grease 9-inch pie plate.
Mix Bisquick, water, and beans together. Spread in pie plate (I use a corning ware dish because it's neater).
Layer remaining ingredients in order given.
Bake at 400 degrees for 25-30 minutes.
Serve with sour cream. Makes 1 (9-inch) pie.

Just a hint..I don't layer the meat and salsa. I mix the meat and salsa together and then put it on top of the bean mixture. I love it! I hope you do too!
