08 recipe Thread

For my shower - my mom asked everyone to bring a recipe with them, and put it into a recipe box that she made for me. I loooooooove it!

So I thought that we should make an 08er recipe thread! I know Jess (mikeandjess) is good for some recipes often - but we should all add one!

What do you guys think? Its a gift to all of us, from all of us!

Homemade Spaghetti Os

My dad always made this for me growing up. Awesome COMFORT Food!

5 cans tomato soup
1/2 package of bacon (optional)
1 box elbow macaroni
milk

Start to fry the bacon
put 4 cans of tomato soup in a pot. For each can put in one can of milk. Stir and put on Medium to medium low heat. Mix. Add Box of dry pasta. The pasta will cook in the tomato mixture.

Once bacon is done cut it up into bitesize pieces and put into tomato/pasta mixture. You can put soem of the bacon grease in for extra flavor.

Continue to stir often to prevent the sauce from burning and sticking to the bottom. Taste the pasta to see when done. Can take about 20-30 min to cook. Pasta will absorb tomato soup. For more of a 'soupier/liquid texture' add the 5th can of soup.

Rigatoni with Sausage, Peppers, and Onions

1/4 cup extra virgin olive oil
1 pound sweet Italian turkey sausages
2 red bell peppers, cored, seeded, and sliced
2 yellow onions, sliced
1 teaspoon salt
1 teaspoon freshly ground black pepper
4 garlic cloves, chopped
1/2 teaspoon dried oregano
1/2 cup chopped fresh basil
2 tablespoons tomato paste
1 cup Marsala wine
1 (14.5 ounce) can diced tomatoes, with juice
1/4 teaspoon crushed red pepper flakes (optional)
1 pound rigatoni pasta
Freshly grated Parmesan cheese, for garnish

Heat the oil in a large, heavy skillet over medium heat. Add the sausages and cook until brown on all sides, 7 to 10 minutes. Remove the sausages from the pan.

Keeping the pan over medium heat, add the bell peppers, onions, salt, and pepper and cook until golden, 5 minutes. Add the garlic, oregano, and basil and cook for 2 minutes. Add the tomato paste and stir until incorporated, then add the Marsala, tomatoes with their juice, and red pepper flakes, if using. Stir to combine, scraping the bottom of the pan with a wooden spoon to release all the brown bits. Bring to a simmer.

Cut the sausages into 4 to 6 pieces each. Return the sausages to the pan. Simmer uncovered until the sauce has thickened, about 20 minutes.

While the sauce simmers, bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, 8 to 10 minutes. Drain the pasta and add to the thickened sauce; toss to combine. Spoon into individual bowls and sprinkle each serving with Parmesan cheese.

Should I keep going...i love this thread

Chicken Francese

4 skinless, boneless, chicken breasts (about 11/2 pounds)
All-purpose flour, for dredging
Kosher salt and freshly ground black pepper
4 large eggs
3 tablespoons water
1/4 cup extra-virgin olive oil
1/2 lemon, with rind, cut in thin rounds
1/2 cup dry white wine, such as Pinot Grigio
1 cup chicken broth
1/2 lemon, juiced
2 tablespoons unsalted butter
1/4 cup chopped flat-leaf parsley

Put the chicken breasts side by side on a cutting board and lay a piece of plastic wrap over them. Pound the chicken breasts with a flat meat mallet, until they are about 1/4-inch thick. Put some flour in a shallow platter and season with a fair amount of salt and pepper; mix with a fork to distribute evenly. In a wide bowl, beat the eggs with 3 tablespoons of water to make an egg wash. Heat the oil over medium-high flame in a large skillet.
Dredge both sides of the chicken cutlets in the seasoned flour, and then dip them in the egg wash to coat completely, letting the excess drip off. When the oil is nice and hot, add the cutlets and fry for 2 minutes on each side until golden, turning once. Remove the chicken cutlets to a large platter in a single layer to keep warm.

Toss the lemon slices into the pan and cook for 1 to 2 minutes, until fragrant. Add the wine, broth, and lemon juice, simmer for 5 minutes to reduce the sauce slightly. Roll the butter in some flour and add it to the skillet, this will thicken the sauce. Stir to incorporate and dissolve the flour. Reduce the heat to medium-low and return the chicken to the pan; place the lemon slices on top of the cutlets. Simmer gently for 2 minutes to heat the chicken through. Season with salt and pepper and garnish with chopped parsley before serving.

1-3/4 cups all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1-1/2 teaspoons instant espresso coffee powder

From my friend:

Pumpkin Cheesecake

2 1/2 - 3 cups vanilla wafer crumbs
1/3 cup butter or margarine, melted
2 (8-ounce) packages cream cheese, softened
1 1/4 cups sugar, divided use
1 teaspoon vanilla extract
3 large eggs
1 cup canned pumpkin
3/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

1) Preheat oven to 350°F (175°C).

2) Combine vanilla wafer crumbs and butter. Press into the bottom and just up the sides of a 9-inch springform pan; set aside.

3) In a bowl, combine cream cheese, 1/2 cup of the sugar and vanilla; mix at medium speed with an electric mixer until well blended.

4) Add eggs, one at a time, mixing well after each addition. Reserve 1 cup of this cream cheese mixture. To the remainder, add pumpkin, remaining 3/4 cup sugar, cinnamon and nutmeg; mix well.

5) Layer half of the pumpkin mixture over the crust, spread on the reserved cream cheese mixture and top with the remaining pumpkin mixture. Swirl a knife through the batter several times without touching the crust for a marbled effect. Bake for 55 minutes or until set.

6) Loosen cake from the rim of the pan; cool before removing from the pan. Refrigerate before serving.

Makes 12 servings.
