1 - Does anyone have a good and easy recipe for corned beef and cabbage? I am the worst cook, however FH is Irish and I really wanted to try to make this for him. Please help.
2 - For those that are Catholic - I know we are not supposed to eat meat on Friday during lent, but since an Irish holiday falls on Friday and the tradition is to eat corned beef, do you think it is ok to eat corned beef on Friday? What are you girls doing?
TIA

I can't answer #1, but I can answer #2.
A dispensation was given by the diocese so that Catholics are able to eat meat this Friday for St. Patrick's Day.

Re: 2 Questions - About St. Patrick's Day
Sadly, I'm Irish and I've never made corned beef and cabbage. I'm not much of a cook either though. Here is one recipe I found. There are more on www.cooks.com if you want to check it out. Happy St. Pat's!!
CORNED BEEF & CABBAGE
2 lb. well trimmed corned beef boneless brisket or round 1 sm. onion, cut into fourths 1 clove garlic, crushed 1 sm. head green cabbage, cut into 6 wedges
Pour enough cold water on corned beef in 5 quart Dutch oven just to cover. Add onion and garlic. Heat to boiling; reduce heat. Cover and simmer until beef is tender, about 2 hours. Remove beef to warm platter; keep warm. Skim fat from broth. Add cabbage. Heat to boiling; reduce heat. Simmer uncovered 15 minutes.

However the Church said they only would grant this for Catholic's who gave up something equally important the day of and repented for eating meat!
And in all the time I lived in Ireland - I never saw anyone eat corned beef. HHMM!!!

Corned Beef is not a traditional meal eaten in Ireland on St patrick's Day it is an Irish-American tradition. When Irish immigrants came to this country, they ate it on St Patrick's Day because a lot of them were poor and corned beef was inexpensive to buy. That is what my grandparents did and it is nice to keep the Irish-American tradition alive. If you want it, just dont eat meat another day.

I know! I mean I didn't live there but my Grandparents were from there. There are so many traditional Irish meals that could be eaten that don't contain meat.

Well there's my history lesson for the day! I didn't know that!!!
We only listened to Irish music in my house and talked about the family back in Ireland and my grandmother would try to show how to do the jig - but I def. didn't inherite her gracefulness for it! Oh and we had Irish sodabread.

I was watching a cooking show the aother day and found out this piece of info that I found rather interesting (somewhat related to the whole cornedbeef and cabbage thing being an irish tradation): Although everyone thinks the Potatoe is irish it was really brought over to ireland from america
Another Irish lesson to be learned!

I was born there and yup, I didn't have corned beef and cabbage until I came here. LOL! I like it but once or twice a year is enough.

Re: 2 Questions - About St. Patrick's Day
Thanks again to all my LIW girls - You girls really are the best!
2 more questions:
1- does anyone know if you have to peel the potatoes before you cook them, or can I just cut up the small red potatoes and put them into the pot like that.
2 - people that I talked to at work about this said to cook the corned beef with beer. Has anyone done this before?

Re: 2 Questions - About St. Patrick's Day
I'm 100% Italian, but my mom loves celebrating the different holidays so we've always celebrated St. Patrick's Day. One thing she changed was the cabbage- she cooks in it in olive oil, a little red pepper, and i think some salt and pepper. It is soo yummy this way!!! I look forward to St. Patrick's day for that and my grandma's soda bread! yumm can't wait!
