Do they then count as a person as far as my table heads are concerned. i am already at the breaking point and am afraid that I would not have enough room. Does that mean I would have to knock people off my list?

I don't think they count as a person as far as tables are concerned. Usually RHs charge you about half a normal plate since they don't really eat a full course. You should check with your RH too though.
Check your contract for your RH. Mine will give us half-price meals for vendors as long as we've reached our guarenteed number of guests.
