Almond horns like those in the bakeries

Does anyone have a recipe? I'm pretty sure they are made with almond paste, not the macaroon type with coconut.

Thanks.

ALMOND HORNS

4 c. flour
1/2 lb. ground almonds, skins removed by steaming
1 c. powdered sugar
3 egg yolks
1 lb. sweet butter, add 1 tsp. salt (or may use salty butter)
1 tsp. vanilla
Chill dough for easy handling. To form horns, roll in round 'ropes' about 3/4 inch diameter. Slice in 1 1/2 inch lengths, shape in 1/4 moon (roll on lightly floured board). Bake on ungreased cookie sheet at 400 degree oven for 7 minutes. Yields about 200 small cookies. Very fragile, remove from cookie sheet with spatula. Cool on paper towel.

Here is another.........

Almond Horns (Yield: about two dozen)
1 can (15 ounces) Almond Paste
1 1/4 cups sugar
2 large whole eggs
Sliced natural almonds
Apricot jam, melted
Chocolate, melted

1 Preheat oven to 375 deg. F.
2 On slow speed, mix the American Almond Traditional Almond Paste with the sugar. Gradually add the eggs to create a smooth paste.
3 Spread the sliced natural almonds out on a large plate.
4 Scoop about 1/4 cup of the and roll it in the almonds, forming each piece into a 3-inch log.
5 Curve into crescent shape and position on parchment lined baking sheets.
6 Bake for 12 to 15 minutes until lightly browned.
7 Remove from the oven then immediately brush with the apricot jam.
8 Cool then chill before dipping the ends into melted chocolate

I know what you mean about buying them (and they freeze beautifully too!), but imagine how good they would be fresh out of the oven? Now I REALLY want to make them. I would love to see the recipe you have.

Thanks.
Mary

Oh wow, our messages crossed. I can't wait to read the recipes.

Hi, I think I'm going to try the second one with the almond paste. The one with 4 cups flour sounds like it may be too dry. What do you think?

Thanks again.
