Another dortinis question

When I called to make my tasting appt they said I can come taste there but decorating and design are done at crest hollow w my banquet manager. I'm
Confused so crest hollow puts the order in for the cake?
Who puts on the flowers?

Is this right I thought I would talk to the baker at the bakery about what I wanted !?
Anyone help or shed
