FH and I are inviting the single people with a guest. We have a few very old family members who are widowed and have been for many years. They haven't dated anyone since the deaths of their spouses and aren't currently dating anyone. Do we still put 'and guest'?
My mom thinks it would look very odd.

we have a few widows in the same situation - we will not be inviting them with a guest.... unless of course we know they are with someone else....

I'm inviting with guest as a courtesy but I know they will come alone---now i think i shouldnt--might be weird--- but too late my envelopes are printed already.

It depends on the situation, it's different for each person you're inviting. It's nice to give them the option if they are much older - they may ask one of their kids or a close friend to accompany them, at the least for transportation, if their kids are not already being invited. We will be doing that for some of my great aunts and uncles (the ones we are not inviting with guests are the ones whose kids are coming). Other widows who are younger, even in their 50's, we will be inviting as guest and leaving it up to them. Someone like my grandfather who will be driving in with my aunt and uncle, we are not inviting w/ a guest.

I would just address the envelope to the single person you are inviting and either you or your mom reach out and tell them that they are of course welcome to bring a guest if they are so inclined. (I actually did that for all my single friends.)
A few I even wrote some notes in them to explain that I didn't know their SO's last names but they were welcome to bring them and just to indicate it on their response card.
I was of the opinion that the more personal, the better.

I did not invite with a guest unless I knew they NEEDED to bring someone.
My great uncle had a home healthcare worker who would 'babysit' for him during the wedding so his family (kids and grandkids) could enjoy the wedding.
I had a cousin dying of cancer and we invited her plus guest (her daughter). The daughter is my second cousin and we didnt invite second cousins. But we made SURE that if she wanted to come she could (hence the guest). Without a guest it would have been insulting.
We played the 'guest' by ear with all our older people invited.

I invited everyone with a guest. I also had some older widows but I wanted them to feel free to bring a friend or one of their adult children. Quite of a few of them did.
