Any chef's/bakers out there...strange question for you...
This is a really weird question but I need an answer....
Can I use a bread recipe (pumpkin bread to be exact) to make muffins? Will they come out ok?
thanks!

Are you making pumpkin muffins? I don't see why couldn't use bread recipe.... Just want to be careful not to over mix or it will be way to heavy.... And you can try using cake flour or all purpose so it won't be to heavy

Sounds good - thank you. I will give it a try...test it out so I see how it is.
Yes my wedding is Thanksgiving weekend...want to do an edible favor and I have the greatest pumpkin bread recipe. Was thinking of making muffins - wrap them up in cellophane with a cute ribbon and tag 'Baked with love by the Bride' or something like that...with cups of Hot Apple Cider to go for all the guests on their way out.

Yes you can, but your time will be way shorter for cooking. Try a batch now.
I LOVE your idea, but I am concerned about doing too much before the wedding. As a bride that thought she had everything done, then was all go, go, go the week before the wedding; I'd caution anything that you add in the days before the wedding. You can always try to bake a batch, (eat one to see how it is) freeze them, and take them out a week later and eat them. You can try this now to see if you could make them earlier and freeze them, leaving you to those loose ends the days before the wedding.
Every bride thinks they have nothing left to do the week before the wedding, but so not true. There are a million little things that happen that you need to tend to. I wish you good luck!!! There is a good shot that you can freeze them, especially if you have a food saver. But I'd try it now to see if it works..

You can also get mini loaf pans. I did this for my sister's bridal shower last summer. I made mini loaves of banana bread a few weeks in advance and froze them. They defrosted beautifully and I wrapped them in cellophane bags and gigham ribbon with a sunflower applique (the shower theme was sunflowers). I arranged them in a huge basket and displayed as part of the decoration. They were a hit! I strongly advise that you bake and freeze.... The last thing you will want to/ have time to do is bake 100+ muffns a day or two before your wedding : ) I know... mine is in 5 days! Good luck!

Sorry I should have shared my full details....yes of course I plan to bake and freeze ahead.... I definitely do not plan on doing all this baking the week of my wedding...no worries but thanks for your concern! And yes good point about shorter bake time...thank you!

I thought about the mini loaf pans originally but I think that will just be a big pain...did you get those mini foil pans? I feel like it will be annoying b/c I have to bake around 250 of them.....I think muffin trays will just be so much easier to bake in and I can use the paper cupcake wrappers so they will pop right out.
I am going to bake some this weekend...I'll try muffins and mini loafs...and freeze and then try them in a week or so to see how they taste!
Thanks ladies!

silicon baking pans... they are amazing! I did about 80 mini loves and it took a few hours. Agree with you about the muffins if you are doing 200+. Good luck!
